1 tbsp canola oil
1 lb boneless, skinless chicken breast, cut into chunks
1 can diced tomatoes
2 cups campbell's ready to use 25% less sodium chicken broth
3 cups fresh or frozen mixed veggies
1 1/2 cups uncooked brown rice
3 cloves garlic, chopped
1 tbsp smokey flavor barbecue sauce
1 tbsp fresh thyme, chopped
1/2 tsp hot pepper sauce

Brown chicken well in heated oil in large non-stick skillet at medium-high heat.
Stir in remaining ingredients and heat to a boil. Reduce heat to low and simmer, covered, until liquid is absorbed and rice is fully cooked - about 25 minutes.

For sea food lovers - Nestle clean, fresh mussels right into the dish for the last 5 minutes of cooking time - until shells open.

Makes 6 servings Prep time: 15mins Cook Time: 35 mins.
