Do you LOVE Chili's Buffalo Chicken Salad? Check this out..

So everytime I have gone to Chili's over the past oh, I'd say 10 years or so..I goT the Buffalo Chicken Salad..LITTLE did I know it had 1170 calories and 72 grams of fat (ignorance is true bliss..and it also accumulated over time on my caboose!)...
So I've been on MFP for about 3 or so weeks now but have been doing serious diet and exercise since the first week of January..I'm down 8 lbs and just a few pounds away from my goal. It's been slow and gradual and done in a healthy way. I am just trying to making better choices and get on that treadmill...so far so good.
So yesterday I picked up a copy of Clean Eating (March) and found a recipe for Buffalo chicken salad..and they used the chili's version to compare to and make something comparable..so imagine my sheer joy when I ran across this. i got the ingredients and made it tonight for me and my hubby...it was DELICIOUS!!! Just had to share the recipe:
Buffalo Chicken Salad (Serves 4 Hands on time 20 minutes, total time 25 mins)
INGREDIENTS;
*1 LB BONELESS, SKINLESS CHICKEN BREASTS
*OLIVE OIL COOKING SPRAY
*1 TSP PAPRIKA (THEY SUGGEST SMOKED, BUT I USED REGULAR)
1TSP CHILE POWDER
1/8 TSP SEA SALT
1/2 SWEET ONION, CHOPPED ABOUT 1/2 CUP
1/2 CUP NONFAT PLAIN GREEK YOGURT
5 TBSP LOW-FAT BUTTERMILK (I USED NONFAT)
1-1 1/2 TBSP ALL NATURAL HOT SAUCE (I USED FRANKS AND I USED 3 TBSPS BC I LOVE IT HOT)
1 HEAD ROMAINE LETTUCE CHOPPED
1 HEAD RED LEAF LETTUCE CHOPPED (I JUST USED 2 HEADS OF ROMAINE)
1 YELLOW BELL PEPPER SLICED (I USED RED)
1 PINT GRAPE TOMATOES HALVED
1 CUP PEELED AND SHREDDED CARROTS
2 OZ BLUE CHEESE CRUMBLED (ABOUT 1/2 CUP)
INSTRUCTIONS:
PREHEAT BROILER TO HIGH, PLACE CHICKEN ON A BAKING SHEET COATED W/ COOKING SPRAY. LIGHTLY MIST CHICKEN W/ COOKING SPRAY AND SPRIN LE EVENLY ON BOTH SIDES W/ PAPRIKA, CHILI POWDER AND SALT. ( I ALSO ADDED SOME GARLIC POWDER BC I THINK IT NEEDED A LITTLE KICK) BROIL 6-8 INCHES FROM HEAT UNTIL CENTER OF CHICKEN IS NO LONGER PINK, ABOUT 6 MINS PER SIDE. TRANSFER TO A CUTTING BOARD AND LET SIT FOR 3-5 MINS AND THEN CUT IN TO BITE SIZE CHUNKS (TO BE HONEST, I AM SCARED OF MY BROILER SO I USED MY GEORGE FOREMAN GRILL...IT WAS VERY EASY - EXCEPT FOR CLEANING IT OF COURSE..)
IN A BLENDER, PUREE ONION, YOGURT BUTTERMILK AND HOT SAUCE (I SKIPPED THE ONION BC I HATE ONIONS!)
TASTE AND ADD MORE HOT SAUCE IF YOU WANT MORE HEAT. DIVIDE ROMAINE AND RED LEAF LETTUCES AMONG 4 PLATES AND TOP W/ BELL PEPPER, TOMATOES, CARROTS AND CHICKEN, DIVIDING EACH EVENLY. SERVE YOGURT MIXTURE ON THE SIDE OR DRIZZLE EVENLY OVER EACH PLATE. SPRINKLE W/ BLUE CHEESE AND SERVE...ENJOY!

I hear you girl...it was totally my fave and of course I thought that by getting a salad I was doing myself a favor..NOPE! Now I eat that many calories in a whole day not one sitting! Yikes! Hope you like it..it was pretty darn good!0 -
