What to do with coconut milk?

    I started using Silk brand Coconut Milk with my b'fast cereal. It is a little higher in sat. fat, which I'll watch. But, it has a lot more potassium than regular milk, which I need. They also have a vanilla flavor -- I might try that next time.

    I lied (above). It doesn't have more potassium. I stopped using it. Regular cow's milk (skim) makes more sense nutritionally for me.

    I bought a can of light coconut milk for a recipe back in fall and had some leftover--so have that in the freezer now! I am not sure what to do with it either but these are all good ideas. I will probably just end up making rice with it. Do you substitute the coconut milk for water when making rice? Also, has anyone froze it before? Wasn't sure if freezing would change the taste or consistency of it.
