Savory Onion Chicken

This is a recipe out of "Taste of Home Comfort Food Diet Cookbook". It's easy and I thought it was delicious!!

1/4 cup all purpose flour, divided
1 broiler/fryer chicken (3 to 4 pounds) skin removed and cut up (I used boneless skinless chicken breasts and it was just as good)
2 tbsp Olive Oil
1 envelope onion soup mix
1 12oz can/bottle of beer or nonalcoholic beer

1. Place 2 tablespoons flour in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, brown chicken in the oil on all sides. Remove and keep warm. (Now, I just put some flour in a baggie and lightly coated each piece and I think that worked better than just the 2 tablespoons)

2. Add soup mix and remaining flour ( I put the whole 1/4 cup flour in here), stirring to loosen browned bits from pan. Gradually whisk in beer. Bring to a boil, cook and stir for 2 minutes or until thickened. Return chicken to the pan. Bring to a boil. Reduce heat, cover and simmer for 12 - 15 minutes or until chicken juices run clear.
