Caramelized onion, pear & brie flatbread

2 tbsp extra virgin oilve oil, divided
1 medium onion, thinly sliced
2 tbsp fresh thyme, chopped
salt & pepper to taste
1 original flatbread
1 large pear, peeled, cored & thinly sliced
1/2 wheel brie, sliced & cut into 1 in. pieces

Preheat oven to 400F. heat 1 tbsp oil in a non-stick skillet over medium- low heat & slowly cook onions, stirring occasionally, until soft and caramel coloured, about 25mins. Add thyme & salt & pepper to taste.
Brush flatbread with remaining oil & spread onions evenly overtop. Fan pear slices evenly overtop bread. lightly season with salt & pepper to taste, then cover with brie pieces.
Bake in centre of oven for 10 - 12 mins. The bottom of the flatbread should be crisp. The brie melted & pears tender. let cool slightly, slice into 16 wedges & serve.
