YUMMY Banana Bread Muffins low cal!

My sister and I just made these this morning and OMG they are SO GOOD! I made them with all the substitutions listed, and I used Bobs Red Mill Gluten Free Flour. With the subs and my gf flour it makes 24 muffins at 86 calories per muffin!

Ingredients:
1/2 c. shortening (I used 3/4 c. unsweetened applesauce)
1 c. sugar (I used ¾ cup white sugar and ¼ cup brown sugar)
2 eggs (I used 1 egg and 1 Tbsp ground flaxseed with 3 Tbsp water)
1 c. mashed bananas (about 3 medium; the browner, the better!)
3 Tbsp sour cream (I used Vanilla Coconut Yogurt- any type of yogurt should work)
1 Tbsp lemon juice
2 c. flour (is using gf flour, add 2 tsp of xantham or guar gum)
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda

I added some nutmeg and cinnamon, like 1 tsp of cinnamon, a pinch of nutmeg.

Directions:
-Preheat oven to 350 degrees
-In bowl of stand mixer, cream shortening and sugar.
-Beat in eggs one at a time; then bananas, sour cream, and lemon juice.
-Sift together flour, baking powder, salt, and baking soda.
-Slowly add dry ingredients to mixture.
-Pour into greased muffin pans
-Bake 25 min or until toothpick comes out clean.

    I am SO trying this this weekend! My husband LOVES banana bread, but now that we are both watching what we eat baked goods don't seem to get so much love from us. :-(

    thanks for sharing. here's a hungry girl version of regular banana bread:

    Go Bananas!

    Ingredients:
    1 1/4 cups whole-wheat flour
    1/4 cup all-purpose flour
    3/4 cup Splenda No Calorie Sweetener (granulated)
    1 1/2 cups mashed ripe bananas (about 3 bananas)
    1/2 cup fat-free liquid egg substitute (like Egg Beaters)
    1/2 cup no-sugar-added applesauce
    2 tsp. baking powder
    1 tsp. vanilla extract
    1/2 tsp. cinnamon
    1/2 tsp. salt
    Optional Toppings: no-calorie spray butter, Cool Whip Free

    Directions:
    Preheat oven to 350 degrees. In a large bowl, combine both types of flour, Splenda, baking powder, salt, and cinnamon (in other words, all dry ingredients). In a separate bowl, mix together the mashed bananas, egg substitute, applesauce, and vanilla extract (all the wet ingredients). Add this mixture to the bowl with the dry ingredients, and stir until just blended. Spoon batter into a large loaf pan (about 9" X 5") sprayed with nonstick spray. Bake for about 50 minutes, or until a knife inserted in the middle comes out clean. Allow to cool slightly, and then cut into 8 slices. If you like, spritz with some spray butter or spread on some Cool Whip Free. MAKES 8 SERVINGS

    These sound yummy!! Is there a calories difference between regular flour and gluten free??
