Healthy and authentic Mexican recipies?

I'm a HUGE fan of mexican food, the flavor is amazing and that it's in my blood certainly helps! Unfortunately I don't have a lot of experience in cooking it without large amounts of cheese, sour cream or pan-frying. Does anyone have any authentic Mexican recipies that I can try my hand at? Even healthier versions of the traditional would be alright. I'm just scared of untried low-fat versions because I worry about the integrity of the recipie.

(Alot of her recipe include boca burgers, but for each burger you can just replace cooked ground beef or ground turkey)

Roll With It!
These li'l Mexican treats are so stuffed, they're almost guaranteed to crack a bit when you bake 'em in the oven -- hence the name "Exploding." De verdad!
Ingredients:
8 small (6-inch) yellow corn tortillas
One 9.75-oz. (or 10-oz.) can 98% fat-free chunk white chicken breast in water, drained well
1/2 cup salsa
1/3 cup shredded fat-free cheddar cheese
1/4 tsp. dry taco seasoning mix
Optional: red enchilada sauce, additional salsa, fat-free sour cream, for dipping
Directions:
Preheat oven to 375 degrees.
In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.
Remove chicken mixture from the fridge, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.
Prepare a baking sheet by spraying with nonstick spray, and set it aside.
Dampen two paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.
Take one tortilla (keep the rest between the paper towels), spray both sides lightly with nonstick spray, and lay it flat on a clean dry surface. Spoon about 2 heaping tbsp. of filling onto the tortilla. Spread it evenly across the entire surface, and roll tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.
Bake for 14 - 16 minutes, until crispy. Allow taquitos to cool for 5 minutes. If you like, dunk in enchilada sauce, salsa, or sour cream!

How about shrimp tacos. Clean and devien raw shrimp and boil. in blender put chipotle peppers and light sour cream, juice of one lime and cilantro if you wish, blend this will be your taco sauce. top your tacos with cabbage, pico de gallo (onion, tomatoe, cilantro, serrano chili, more lime and salt) and your taco sauce. You can use either flour or corn tortilla...for a more authentic taste, go with corn. Enjoy. Hope i didn't leave anything out.0

I too love mexican food and thave substituted whole wheat tortillas or brown rice when I can or added some of the same flavors to other dishes!! I dont know how authentic they are but I feel like it has helped! Also try a sharper flavored cheese because you can get the same flavor with less cheese!!0

Try all recipes dot com ..... I found a great chicken tortilla soup. ( used chicken tortilla soup II ) It was awesome! I used fat free low sodium chicken broth.
But you can look through there just type like burritos or mexican or something your interested in, in the search bar on that page and look for one that sounds good.
The recipes there are rated by stars too by others so you can look through that too. All recipes is my new cookbook0 -

Made the taquitos from the hungry girl site today but I used the white corn tortillias instead (its what I had on hand) and they were GREAT! I am a Mexican food junkie and I think that has been the biggest challenge for me as far as changing eating habits. If only I could find a good way to incorporate the rice back in without splurging on 250 cal for 1/2 cup I would be a happy gal!!0

I love Mexican food too!! I have been on a kick of it lately so been making a lot of tacos lol These are some tasty and healthy recipes I have found. I still love to get steak tacos at my favorite place though....mmm
