Found these on allrecipes.com, and they are great!
I followed the original recipe EXCEPT that I only used 1T of EVOO (recipe called for 3), which takes a third of the fat out of it and shaves calories. Your ultimate calories will depend on the size of the sweet potatoes and how much oil you use.

I found that just about anywhere I used EVOO, I can use Low-fat or fat free chicken broth (or veggie broth). What I use is 5 calories for a cup. Buh-bye wasted calories. Works for me0
