Ingredients
2 eggs
2/3 cup Splenda
2 bananas, mashed
 ¼ cup sugar free applesauce
1/3 cup Skim milk
1 Tbsp vegetable oil
 ¾ Tbsp vanilla extract
¾ cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
 ½ tsp salt
1/3 cup chopped walnuts
Preheat oven to 325 degrees F (165 degrees C). Spray a bread pan with non-stick cooking spray, and lightly dust with flour. In a large bowl, beat eggs and Splenda in a large bowl until light and fluffy, about 5 minutes. Beat in bananas, milk, oil, applesauce and vanilla. In a separate bowl, sift together flour, baking powder, baking soda and salt. Stir flour mixture into banana mixture, mixing just until blended. Fold in walnuts. Pour batter into prepared pan. Bake in preheated pan until golden and a toothpick inserted into center of the loaf comes out clean, about 1 hour. Turn bread out onto a wire rack and let cool.

Banana-Wheat germ Muffins
1c Soy milk (I used plain almond-lower cal)
1 tsp apple cider vinegar
2 very ripe banana
1/3c canola oil (i left it out for applesauce)
1/3 c sugar (i used 1/2 c honey)
1tsp vanilla
11/4 c whole wheat pastry flour or other
3/4c wheat germ
1tbsp ground cinnamon
2tsp baking powder
1/2tsp salt
bake 375 about 22 min
pour vinegar into milk and set aside to curdle
mash banana and add wet ingred.
mix dry and add together with wet
Mine came out to about 212 cal each, but I added choc chips0 -
I only used 1/4 tsp salt0

Ingredients:
1 1/4 cups whole-wheat flour
1/4 cup all-purpose flour
3/4 cup Splenda No Calorie Sweetener (granulated)
1 1/2 cups mashed ripe bananas (about 3 bananas)
1/2 cup fat-free liquid egg substitute (like Egg Beaters)
1/2 cup no-sugar-added applesauce
2 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. salt
Optional Toppings: no-calorie spray butter, Cool Whip Free
Directions:
Preheat oven to 350 degrees. In a large bowl, combine both types of flour, Splenda, baking powder, salt, and cinnamon (in other words, all dry ingredients). In a separate bowl, mix together the mashed bananas, egg substitute, applesauce, and vanilla extract (all the wet ingredients). Add this mixture to the bowl with the dry ingredients, and stir until just blended. Spoon batter into a large loaf pan (about 9" X 5") sprayed with nonstick spray. Bake for about 50 minutes, or until a knife inserted in the middle comes out clean. Allow to cool slightly, and then cut into 8 slices. If you like, spritz with some spray butter or spread on some Cool Whip Free. MAKES 8 SERVINGS

try skinnygirl.com. she has tons of recipes and Ijust made the banana bread the other day and it is really good and around 109 ( I think) per slice!!!0

Skinny Girl, Bethenny Frankel, has a great "pound cake" recipe. It uses bananas and I personally think it tastes more like banana cake than pound cake. I really liked it.0

I looked up skinnygirl.com, and the website doesn't have anything on it, except explaining a lawsuit from Bethenny Frankel because they stole her name, so I guess she's not associated with the site. And I couldn't see the recipes0
