Salsa Chili

So I just had this concoction for lunch and decided to name it Salsa Chili. It’s very simple and you can easily make one serving or 4. So here is what I put together for 1 serving:

½ cup salsa (homemade or store bought)
½ cup of black beans (or whatever bean you like)
Spoonful of fat free refried beans (this will thicken it up)
½ a jalapeno chopped (more or less to taste, I like it spicy)
¼ cup of corn
¼ cup of shredded mozzarella
Little bit of chili powder to taste

Through everything in bowl and microwave until hot and cheese is melted, or heat in a pot on the stove and top with cheese. Enjoy!

324 Calories, 7 fat, 21 protein, 49 carbs, 17 fiber, 28 calcium

Feel free to add meat or other ingredients but this will alter the nutritional facts.
