You should have asked me yesterday.. i cooked up a batch of turkey chili and some chicken breasts. Had some of the chili for lunch today and will eat the chicken again today as leftovers. Handy, because it will be a simple reheat after my workout.0

Chili and rice with a side ceasar salad. Toppings for chili were grated cheddar and hot sauce.0

I had whole wheat linguine (can't believe there is 300 calories in 3 ounces ugh) with broccoli, carrots and red peppers steamed in vegetable broth garnished with olives and ground pepper and a salad with it.0 -
Bacon, skinny eggs (1 pt egg, 2 pt egg whites) on a whole grain sandwich thin with a slice of tomato.0

Steamed cauliflower topped with Nalley's Vegtarian Chili, FF Cheese, and FF Sour Cream. Faux potato bar! (The kids get actual potatoes! I get cauliflower!)0

Addictive Sesame Chicken & Jasmine rice. The recipe for the chicken is on all recipes. It's sooo yummy. My kids and husband can't get enough of it. Tonight is leftovers from Sunday.0

Is that a recipe you can share? I love it but have never made it myself.
It's very simple and nothing really all that special.
I use about a pound of 96/4 extra lean ground beef. When it is cooking, I season it with oregano, basil, garlic, and pepper. Then I add 2 jars of Colavita brand puttanesca sauce (it is very low in sugar, very low in salt, and very low in fat as well...I love Colavita sauce because it is basically just the tomato sauce, spices, and veggies). I sometimes add more spices (usually more oregano) if I think it needs "something." And I serve it over Barilla Plus angel hair pasta. I cook 1/2 of the box. It makes 4 servings at 491 calories that way. If you look in my diary, you will see the fat, protein, carbs, sodium, and sat. fat levels as well.0 -
It was a chicken breast and steamed veggies. Pretty simple but OH-so good.0

I made a turkey meatloaf, roasted red potatoes, and broccolini sauteed in a bit of EVOO and garlic and then mixed with some melted lauging cow cheese. SOOO good.0

A sausage roll: made with a chunk of French baguette, a smathering of Dusseldorf mustard (that we got from Dusseldorf!), a pile of Bavarian style sauerkraut, and a 5" chunk of the sausage that we make ourselves (from wild hogs which run wild on our ranch, an old German spice recipe, and all of that stuffed into natural pork casings (aka intestines)). It was delicious!

Spicy chicken/refried bean tostada with TJ blue corn tortilla, soy cheese and soy sour cream topped with lettuce.tomatoes and salsa, it was delightful!0

Spicy Black Bean Veggie Burger on Arnolds Multigrain bun, super sweet corn, and roasted garlic baby potatoes with parmesan cheese! It was great!0

Roasted lemon chicken, steamed carrots, and mashed potatoes. (The mashed potatoes were made with water and low-sodium chicken bouillon and NO milk or butter. I added some garlic powder and misc. spices and they were DELISH!)0

2 pieces of pita bread (i know, but they're only 80 calories eash and on the small side!) with about a teaspoon of roasted red pepper pesto, a handful of wild rocket, 3 slices of oven roasted turkey breast, and sprinkle of crumbled feta cheese. Soooo goooood...
Everyone on here has had some pretty tasty dinners! I'll be trying some new recipes soon and I'm feeling very inspired...0 -
Last night I had a creamy bacon and leek risotto - made with low fat cream cheese, heaven! Tonight I'm having a salmon stirfry with noodles, veggies and teriyaki sauce. Yum!0
