This was amazing! I cannot wait to fry up some of the leftover balls tomorrow for lunch!! I would MOST DEFINITELY make these again.
I ate them on a whole wheat tortilla with some lettuce and garlic aioli. It was so good. My boyfriend ate them plain, dipped in a little bit of spicy mustard. I tried a bite of that, and it tasted almost like a corn dog (really, really yummy!)

This was really good, too. I would recommend chopping the garlic up into little bits before crushing it--I tried crushing it in a garlic press, and ended up with huge chunks of garlic in the sauce. It went really well with the falafel--and I cant wait to try it with some fries.

These were.... alright. They'd be fine in a pinch when you're watching fat/cals, but really don't compare to actual onion rings. The breading didn't stick well, and they were overall a little disappointing. I might make them again, but only if I'm terribly desperate for onion rings.0 -

Thanks for all the recipes and links!! I'll have to go on an online recipe adventure later!while we are talking about recipes, does anybody have any quick and simple ones I could try? (think sort of picky eater + college student on a tight schedule...doesn't make it easy for me haha)
Creamy Carrot Ginger Soup
1.5 cups carrot juice
1/2 avocado
1/4 cup coconut meat (optional)
1/4 c lime juice
1 Tbsp agave nectar
1/2 Tbsp minced ginger
1/8 tsp cayenne pepper
1/8 sea salt
cilantro (for garnish)
Step one: Puree all ingredients until smooth.ENJOY!
My notes:
- Agave nectar is like honey
- I use dry powdered ginger (the spice) instead of the root
- Use less cayenne if you don't like hot things
- I use Himalayan salt
- I don't use the coconut meat or lime juice
- To make it quick, you can buy carrot juice (I love the Bolthouse Farms carrot juice!!), and use that!0 -

I didn't really try anything super new last night, I used the ingredients I normally do but in a new combination and with some new seasoning. It was a darn good low-cal meal that I'm gonna make again. Just thought I would share:
In a olive-oil cooking spray coated pan combine 12 (thin) asparagus and 2-3 cups of swiss chard on medium high heat. Add 2 crushed garlic cloves and a splash of balsamic vinegar, 1/2 teaspoon mustard powder and a dash of ginger powder. Cook until browned--or however you like your veggies. In a second pan or the same one cook an egg--over medium, poached, sunny side up...whatever your preference.
Top 1/4 cup of white or brown rice with asparagus, chard and egg. Top with 2 tablespoons of fresh shaved parmasean, pepper and sriracha. Devour.

Oh steph I am sure I am just thinking hopefully and there is actually much more lol. Besides we haven't even touched the garage! But that is all jeremy next week! As for now, still have candles, kitchen and clothes...that's bout it I think...I think....oh and the kitchen!! That will be time consuming but we will pack that up tomorrow together. The is a good soup and the dill gives it extra flavor. I only used 4 cups of Chicken Broth because it had so much sodium. To substitute for the other cups of chicken broth, I used the water that I boiled my chicken breast in and just added more when needed.0 -
