Ahhhh...mazing Asparagus

OK...I know for many non-veggie loving members this is hard to believe but my 10 year old and non-asparagus loving family literally fights over the last spear. The trick is to let them eat it with their hands like a stalk of celery (crude but effective)...for the ten year old. This recipe is so easy and I would like to hear back if you have similar results. Otherwise I am throwing away all the forks in my quest for a healthy eating family :bigsmile:

1 Bunch of Fresh Asparagus (Wash and trim tough stems 3/4 inch)

In large skillet (Frying Pan) fill 1/2 way with water (1/2 tsp salt optional in water)

Bring water to a boil and add asparagus

Cook about 4-8 minutes depending on thickness. *They are done when a fork can penetrate stalk)

DO NOT OVERCOOK. (Better a little under than overdone!)

Drain and quick rinse with cold water and set aside.

Return same pan to burner and saute the following for 2 min:

1 Tbsp. Smart Balance LIght
1 Teaspoon olive oil
1/4 tsp garlic powder
3 Tbsp. soy sauce (low sodium if possible)
Squeeze of fresh lemon from 1/4 lemon
1/8 tsp. fresh black pepper

Return asparagus to pan and heat for 1-2 min in sauce.

Serve immediately with sauce. Graciously accept compliments :blushing:

    I love asparagus too but I just simply put some salt and olive oil on them and put therm on sheet and under the broiler it goes and its sooooooooooo good. I got my family hooked.

    sounds good.

    Have you tried drizzling with olive oil and baking it in the oven
    sprinkle with salt, pepper, thyme.

    I do a baked Asparagus (it's also wonderful grilled):

    Oven 350.

    Toss veggies in olive oil, salt, pepper, and I like thyme.

    Bake 30 minutes or so, maybe less depending on thickness of asparagus.
