the kids asked for my homeade taco salad for dinner which isnt to healthy as i use doritos but i got myself healthier chips along with veggies and such only problem is im not sure how to count the hamburger calories??? also anyone have ideas for healthy tacos or taco salads id love to have them ( mexican food is my weakness) well atleast one of them. lol

get the lean 93/7% meat...one serving is 4 oz, so it's about 1/4 of the package.
You can also cook chicken in the crockpot with taco seasoning, and then shred it up and use that in place of the hamburger meat. You can make your own tortilla chips with corn tortillas...cut them up and cook in a 350* oven until crisp (spray with pam first and season). Low fat or fat free sour cream, fat free cheese, salsa is awesome and even better if you make your own (with no sugar).
For my salsa, I put 1-2 cans of fire roasted tomatoes (depending on how much I want) in a food processor with 1 diced jalapeno, a little cilantro, some garlic and onion and lime juice. Salt and pepper to taste...so good and healthy...and great with lots of food!0 -
I feel your pain! Mexican food is my weakness also! Like you we use doritos in our taco salad. We have started using the baked doritos and 93% lean ground beef. I measure out the beef to stay at 3 oz or less and count the chips to make sure I stay below my target calories. Little to no sour cream. LOTS of tomatoes, onions, jalapenos, salsa and other veggies.0

You can find nutritional info for the burger in the MFP database. The only issue would be if you use some type of taco seasoning; if you use seasoning packets then just use the info from the packaging. Or measure your serving of meat out and set aside; add salsa to it later for fewer calories and sodium.
When I make taco salad, I make myself a huge salad. I use a couple cups of lettuce and then measure and add my other ingredients (meat, cheese, black beans, tomato, salsa, sour cream, etc.). Then I eat my chips with my salad instead of making the chips part of the salad.
I also like to use chicken in my mexican dishes instead of beef. It's really tasty and does knock out a little bit of the fat content.
I hope my hubby wants Mexican tonight because now I'm craving a taco salad. :laugh:0 -
I love tacos, but I've opted for ground turkey instead of beef. Also, I use lettuce leaves instead of taco shells. May not sound like a very good trade off, but really they're delicious and calorie conscious. If I were you, I'd use the "My Recipes" section and enter in every ingredient that you put into your tacos, or taco salad. Then tell it how many people the recipe serves (for me, I usually get 5 servings w/my turkey lettuce wraps) the system will calculate TOTAL calories and such as well as calories PER SERVING. I've found it extremely helpful. Now I can eat things that aren't pre-packaged, and still have an idea as to how many calories I'm consuming.0

It uses ground turkey BREAST, which is even healthier than ground turkey meat. I also use a taco seasoning recipe I found on All Recipes that greatly reduces the sodium:

thanks for all the great ideas i think ill just make myself something else though i know it sounds kind of silly but im a little scared to eat anything that doesnt have nutrition info0

I made this one this last week. Suuuuure I kinda missed the crunchy addition of tortilla chips or something but it was actually really satisfying and I almost felt guilty as I ate it w/ a fellow dieting partner at work the next day.

I have been craving taco salad all week and made a sort of
taco salad with leftover turkey chili. I cut, seasoned & toasted some leftover wheat pita
as a Dorito sub.
I mixed garlic-garlic with greek yogurt for a sour cream sub too
