Parmesean Chicken Plus Sides

Ok everyone, I have a gerat low cal recipe for Parmesean Chicken plus sides.

For one serving you'll need:

1 4 oz skinless chicken breast

1/3 c parmesean cheese

1/2 tsp each of rosemary, thyme and marjoram

salt and pepper to taste

1/2 tbsp olive oil

Now:

1. Preheat oven to 425, and prepare cookie sheet or pie tin.

2. In bowl, mix parmesean cheese, and seasonings. Rub olive oil on chicken and then dredge in the cheese mix.

3. Place chicken on sheet and place on middle oven rack. Cook for 5-7 min on each side or until chicken is starting to brown.

Sides:

1 pkg of Valutime Chicken flavored rice mix. Follow instructions for low-cal option. This option has you remove the butter/margerine from the reciepe and you only use the rice, flavoring and water. 1 serving is only 120 calories.

Hint - the low cal option is NOT listed in the choices on this site, when posting it to your food diary, cut the serving size from 1
to .5.

1 serving of french cut green beans only 20 cal.

Total calories is only 380 for the whole meal. Not counting what you drink.

    I do the same thing with chicken. I use grated parmesan cheese, and when the chicken is done baking, I put it under the broiler for just a few minutes. It gets crispy and really yummy! :)

    It does.

    The oil acts as the binder to the chicken just like butter or an egg wash.

    You can also NOT use the oil for even lower cal and fat and just sprinkle the mix on top.

    I have cooked it twice for my family and they have loved it!

    Dumb question but how thick of chicken breasts are you using? It usually takes 35-40 min when I cook chicken not 5-7 minutes each side.

    I use normal size chicken breasts, however I cut the breast in half. One serving of chicken is actually one half of one of those frozen boneless chicken breasts.
