Eat all of your calories in a day? I am allowed 1400 and I still have 300 to go and not really hungry but I know I should eat something soon before bed.

People have different opinions on this, but I think as long as you're eating often enough to keep your metabolism up then it's fine (5+ meals/snacks a day).
If you find you're consistently falling a couple hundred calories below your target, then it might be time to lower your target!
