How to cook fresh artichokes

Hi, I love eating cooked artichokes from the Italian restaurants back home..mmmm, delish

Wondering if anyone has any ideas on how to cook at home. I'm thinking it's equal amounts of grated cheese and breading, parsley and some lemon juice at the end.

Do share your sucessful artichoke recipes....

    i just steam it, i dont put any other goodies while cooking. although the lemon juice, breading, cheese etc. sounds delish.

    I also steam. Sometimes add a clove of garlic to the water. Enjoy with a bit of butter. Great lunch!

    I LOVE artichokes. Absolutely one of my favorite foods. These are the only plants that have meat!! It depends on how you buy the artichokes. If you just buy the hearts, there are several ways to prepare them. I generally put some olive oil in a pan and fry them up with some mushrooms and eat them on a small whole wheat sub with provalone cheese. However, if you buy a WHOLE fresh plant, the best way I have found to cook them is to put them in boiling water, cover with a lid, and you know they are done when you can pull a leaf towards the bottom/middle out. Then, once it is done I make a lemon and butter mixture to dip the leaves in. Only eat the part of the leaf that has meat on it, which means scraping the leaf with your teeth! Then, when you get to the heart, scrape out the hair with a spoon, and I love to kind of marinate it in my lemon and butter mixture, but you can also just dip it and eat it.

    Which ever way you decide to make it, I am sure it will be delicious!! I hope you enjoy! :happy:

    I love artichokes and would like to know how to cook and prepare them.

    I always get this image of the kids from the Little Rascals whenever I see a whole artichoke.

    mmm.. reminds me of my mom....

    she would make stuffed artichokes... snip off the points and top, then seasoned breadcrumb stuffing in the leaves and core.. steam until tender... Peel off leaves and eat the stuffing and meat off the leaves.. then scoop out the choke and eat the heart..

    also, she'd peel the leaves off to get just the heart... then simmer until tender.. clean the choke off, then make a frittatta (Italian style egg omelet).

    I so miss her cooking sometimes.

    Yes, I think this is what I am looking for...most of the Italian restaurants have them in Chicago...some people bake and some boil...I'm thinking that baking would be more healthy; but, the moisture from steaming would taste better

    Kim, for the stuffed chokes, she'd bake them with a small amt of water in like a 13x9 cake pan covered in foil.. so, baked and steamed if that makes sense... some also top them with a bit of tomato sauce for flavor..
