Beef & Broccoli - 198 calories

Made this for dinner tonight. Was a bit disappointed because when I found the recipe it said it had under 200 grams of sodium....soooo not the case. I even used a homemade soy sauce (I'll include that recipe too) that's 100 times lower than low sodium store bought soy sauce the recipe wants you to use, and it was still higher than what they had put. But oh well, it turned out really good, actually tasted like it does when we go out. Definitely something that would help me when I'm craving Chinese food. :)

Ingredients (makes 8 servings)

1 Medium Yellow Onion

2 tbsp Minced Garlic

1 lb Steak , cut into thin slices (I used Thin cut Eye of Round Steak)

2 tbsp Reduced Sodium Oyster Sauce

2 tbs Reduced Sodium Soy Sauce (Homemade)

14 oz Broth (made with Herb Ox - Sodium Free Beef Bouillon)

1/4 cup all purpose flour

2 lbs Broccoli (I used Frozen, fresh would probably be better, but frozen was good)

Directions

1. In a small bowl, combine the cornstarch, broth, soy sauce, and oyster sauce and whisk until smooth. Set aside.

2. Spray large skillet or wok w/ PAM (or similar cooking spray). Add the steak, onion, & garlic and cook, stirring constantly, for 5 to 7 minutes, or until the beef is browned.

3. Add the broccoli to the skillet and cook, stirring constantly, for 1 to 2 minutes, or until the broccoli is bright green and crisp-tender. Add the broth mixture (whisk again before pouring in to make sure its well mixed) and bring to a boil, stirring. Reduce the heat, add the beef, and simmer for 5 minutes, or until the sauce thickens.

*Sauce will thicken more as it cools as well.

Sodium Free Soy Sauce.

2 Tbsp Sodium Free Beef Bouillon (Herb Ox - Sodium Free Beef Bouillon)
2 tsp Red Wine Vinegar
1 tsp Molasses
1/8 t Ground Ginger
dash Black Pepper
dash Garlic Powder
3/4 c Water

In small sauce pan, combine and boil gently uncovered about 5 minutes or til mixture is reduced to 1/2 cup. Store in refrigerator. Stir before using.

Yield: 8 1 TBSP Servings


** I had to buy my Beef Bouillon from Amazon.com since I couldn't find Sodium Free Bouillon anywhere in a regular grocery store, but it was so worth it.

    Sounds realy good. I'm tempted to try a "Chicken & Broccoli" version of this too.

    welcome. The soy sauce is really good, I think I'm going to try using it when I make egg rolls next time to cut down on sodium.
