BBQ Baked Lentils

(serves 8 - 203 calories, 1 g fat, 6.2 g fiber)

3 cups water
2 cups dried lentils
1 cup diced onions
2/3 cup low sodium, low carb bbq sauce (i get mine at whole foods)
1/4 cup prepared mustard
1/2 tsp ground ginger
1/2 tsp vanilla extract
1/4 tsp ground allspice
1/4 grouond pepper

preheat oven to 350. Combine water & lentils, bring to boil, cover, reduce heat to med-low and simmer 20 min. frain, reserving 1 cup of liquid.

combine lentils and diced onion in 11x7 inch baking dish. combine reserved liquid, bbq sauce, and remaining ingredients - mix w/ lentils. bake 1 hour.

    LENTILS are delicious, and extremely high in fiber and iron.

    In the summer I like lentils-tomato salad, or lentils with lettuce, tomato, onions, olives salad. Very filling and healthy
