I have a bag of frozen shrimp with the tails on the freezer. Any ideas on what to do with them? I would love to use them up! Thanks in advance!

I love taking a shrimp cocktail to work for lunch or just pull those tails off and make a low cal jambalaya, gumbo or a whole wheat pasta dish. Check out spark recipes.com I'm sure you will find something yummy!

I do pasta, green, red, yellow peppers, onion and shrimp. If you go easy on the pasta the veg is very filling. You can add whatever veg you have and just a touch of olive oil. You could also cook them in seasoned water--Old Bay--or make your own spice blend and then throw them on salad when they are cold.

I throw them in a pan with some Pam spray to keep them from sticking and brown them up. Then I put some lemon pepper seasoning on them to coat them. YUM!

Angel Hair with Shrimp and Asparagus

I love pasta and crave it often. To keep the points down, I load it up with vegetables and I use a low carb or high fiber pasta like Dreamfields or Ronzoni Smart Taste which has the same great taste as regular pasta and my family doesn't notice the difference. Hear is a simple pasta dish I made with fresh tomatoes from my garden which makes a nice light tomato broth. The portions are very generous so you will not be hungry when you are through.

    Servings: 4 • Serving Size: 1 large bowl • Calories: 388 • Points: 6.75 pts
1 bunch asparagus, tough ends removed, quartered
    1 tbsp olive oil
    6-8 ripe plum tomatoes, diced
    2 cloves garlic, thinly sliced
1 lb large shrimp, peeled and deviened
1/2 cup fat free chicken broth
    1/2 cup white wine
    Salt and fresh pepper
1/2 tsp herbs de Provence (or you can use your favorite herbs)
1/2 tsp red pepper flakes (gives it a little kick)
8 oz angel hair pasta, high fiber or low carb
Heat a large skillet on high heat. Season shrimp with salt and pepper. When skillet is hot, spray with oil and add shrimp. Cook shrimp about 2 minutes in each side until almost cooked through and remove from the pan. Set aside.

Reduce skillet heat to medium, add olive oil and garlic and sauté until golden, careful not to burn. Add tomatoes and season with salt and pepper. Simmer about 4 minutes. Add white wine and broth and stir. Add asparagus, salt, pepper and herbs. Cover and simmer for 10 minutes on medium low heat.

While sauce is simmering, boil salted water and cook pasta until desired tenderness. Drain when done.

After sauce simmers 10 minutes, add shrimp to sauce to finish cooking, about 1 minutes (Do not overcook or shrimp will get tough). Add pasta to the sauce and toss well. Divide equally in 4 bowls and top with a good grated cheese.

Yields a little over 1 1/2 cups per serving.

Take them out of the freezer and let them thaw in a bowl of water. When thawed remove the tail. Rinse them well to make sure no shell remains stuck to them. Some of my favorites are cold shrimp in a salad, shrimp stir fry over rice or noodles, shrimp cocktail, skewered and grilled, sauted in garlic and evo with some parmesan cheese over linguini, and tossed in a twisty noodle italian style salad (black olive, tomato, shrimp and italian dressing). OH there are so many options! We love Shrimp and have it at least once a week. We love to saute them with veggies (almost like a Stir-fry), or served with pasta and sauce is great too. Sounds like you got some great ideas already...

I have a recipe here on MFP called 'Shrimp with tomatoes and zuchinni". Very yummy! Search for it and give that a try.
