WANTED - Clean recipe with leftover chicken

So in attempt to really eat cleaner and better, I thought I'd throw this out there and see if I can get some good ideas! I have leftover chicken that I baked in the oven and I'm looking to use it up. It was baked with celery, garlic, onion, lemon, olive oil, and a dash of S&P.

I have lots of vegetables and fruits at my disposal, and can grab anything else I need (like rice noodles).

    I am cooking my leftover chicken right now with some rice, brocolli, and cream of chicken soup! Hope it turns out edible :wink:

    Chop it up and make chicken salad.....grill it a little and throw some in a salad....:wink:

    I love hot sauce and blue cheese crumbles or
    grilled tomatoes, capers, pine nuts and pasta with chicken with a dash of lemon or
    I love a salad with spinach, tomatoes, almonds, hearts of palm, articoke hearts, beets and blue cheese crumbles with good seasons just mixed with vinegar.

    Fajitas w/low fat or whole wheat tortillas or skip the tortillas if you want.

    I usually do fried rice or risotto. Use a low cal oil if you can.

    I do a chicken, rice and veg stir fry when I'm pressed for time but don't want to be naughty. Here's the recipe for 2 servings:

    100g of jasmine rice
    1g of rice bran oil
    15ml light soy sauce
    160g of frozen oriental mix (I buy mine at Iceland)
    60g frozen sweetcorn
    50g frozen peas
    200g of shredded cooked chicken
    1 tsp of chinese five spice

    Boil rice as per instructions and allow to cool. Put soy sauce and oil in a wok and heat. Add all the frozen veg and chines five spice. After about 3 to 4 minutes add the cooked rice and chicken and stir through until the chicken and rice are hot.

    I like to make a chicken stoup. Mix assorted veggies with a can of diced tomatoes - maybe throw in some V-8 juice, a bit of chicken stock - thicker than soup - add brown rice and black beans - sprinkle some shredded /grated cheese on top when serving. I could eat this every night!
  • Heat it up with black beans and diced tomato or rotel, add some cilantro - eat it over rice or with tortillas , or just add broth and eat as soup. Super easy.
