Cheesy, Quick, and Cheap: Brown Rice, Black beans, and corn!

Made this for dinner and it was a hit with my guy, thought I'd share it.
1 cup dry brown rice (I used Trader Joe's Organic Brown Jasmine Rice)
1 can black beans, drained of all liquid and rinsed thoroughly (I used Trader Joe's Black Beans)
4 -ish ounces of reduced fat cheese (I used 4.4 ounces of Cabot Reduced Fat Cheddar 75%)
1 cup frozen corn (I used Birdseye)
2 - 5 tablespoons of water
Spices to taste:
Cayenne pepper
Chili powder
Black pepper
Powdered Garlic
Cook rice according to directions.
Shred cheese and set aside.
Drain and rinse beans, place in frying pan on medium heat. Add water and spices, cooking until warmed and water has mostly cooked off. Add corn, stirring occasionally. Turn off and remove from heat when corn is warmed through.
When rice is done cooking, combine with bean mixture and add in cheese. Stir and serve. Makes 4 - 8 servings.
Serve with fat free sour cream and salsa, salad greens, or use on its own.

596 sodium (please note that this is probably higher than the dish actually is, due to draining and rinsing beans)
8 grams fiber

Delish-- I make a batch of it often and keep it on hand. I'll make it sometimes with ground beef, also, and throw in a can of spicy diced tomatoes. What I have on hand, I throw in.
Keeps well in the fridge, too.0 -
