Caprese Salad

I try to incorporate some of my "mommy" food every night into dinner - and last night apparently I hit it out of the park with a Caprese salad -

For those that need the instructions -

1 C grape tomatoes - cut in half
1 oz fresh mozzerella - (string cheese worked!)
5 leaves fresh basil - rolled and thinly sliced
1 T balsamic vinegar
1 t Olive oil
sea salt & ground pepper to taste

mix all the goodness in a bowl and refrigerate for about 30 minutes - OMG this was NUMMY

about 103 calories and with grilled chicken it was a perfect meal!
