Breakfast cereal with as much fiber as possible. Take the sugar amount in a serving and subtract the fiber amt. This will tell you how much sugar you are really eating in the cereal. The less the better. Throw in some blueberries or whatever fruit is cheaper and that you like. Do not get granola. It is a fattener.
Low fat string cheese is a good snack. Weight watcher's has a good one.
A tablespoon of chopped walnuts or one ounce (1/8 cup) of any nut that you like.
Peanut butter is good with or without apple slices.
Lunch: a slice of ham or turkey or chicken without skin. I like to bake skinless chicken with lemon pepper for 30 minutes on 350 degrees. Add a little salad or greek yogurt with splenda and fruit.

You need to educate yourself more on nutritionally dense foods. Slimfast is okay every once in awhile, I guess?
I'm not gonna lie, my purse usually has about 2 or three pieces/sandwich bags of fruit and some sort of nut (usually almonds). This is for snacks. The other day, on of my students saw me pull out a baggie of strawberries and a plum and just cracked up.
Search the message boards here for grocery shopping and snack ideas.
Planning is as simple as sitting down on the weekend, making your grocery list, then preparing/organizing however you need to when you get the food home to get ready for the week (make snack portions of foods then store them properly for easy grab and go).
Learning to cook is as easy as getting in the kitchen and trying different recipes. Look online. Call friends/family that cook and ask tons of questions! I can cook a meal....1 meat and 2-3 veggies in about 15 minutes if I need to.
And trust me, I'm busy.....I have an 8 month old, I teach and coach two sports, planning two huge fundraisers, a class reunion, etc. If I can do it, you can too!0 -

My doctor told me to just cut out sugar (as much as possible), white potatoes and white rice. This is the best way to begin to lose weight. I lost 20 lbs. just starting out by cuttting out these things. I was way into losing before I added exercise. So you're already way ahead of me. By the way, Atkins shakes are much better for you than Slim Fast. 15 grams protein to fill you up. 160 or 170 calories. Almost no sugar. And $6.34 for 4 (6 when on sale).
Basically eat by color........many different colors of veggies and fruits. Only white should be dairy....milk, yogurt, cheese, cottage cheese, etc. and cauliflower. Black foods should only be dark breads that have lots of fiber and whole wheat.0 -

As for cooking I was the same way. i used to joke that I could burn boiling water. And Ive set a stove fire or 2. I actually am a pretty damn good cook now but thats after 3 yrs of messing up and repeatedly just going back at it. If cooking is something you dont enjoy doing thats different and I saw some great stuff on here about precooked chicken. Sometimes if its not something you like ur not good at it. Like math for me. But seriously good luck on your journey.0 -

what I do is eat one of each color if possible each day.
an example would be :

lunch: banana (another fruit), celery with peanut butter (another healthy fat) or broccoli with hummus (hummus is beans, this is 2 good veggies), a sandwich with either skinless chicken made like I posted before with the lemon pepper. (this is protein)
supper: pork chop or meatloaf (both can be bought premade), sweet potato ( 1 veggie or 2 if it's big) - wrap in saran wrap and microwave for 11 minutes. a slice of bread (100% whole wheat).
This should give you 2 fruits, 2 good fats, 1 dairy, 2 or 3 veggies, 2 proteins
You should be good to go and full.
Substitute any color of fruit or veggie you like and make it as simple as possible.0 -

You don't have to eat every color every day. Just eat a variety of colors each day. Each color veggie and fruit has it's own good things it contributes to your health.0

If you don't want to eat meat, just eat beans. They have the protein that you need to keep you full and none of the bad cholesteral.
You can get the good cholesteral you need from eating nuts, seeds like peanuts, walnuts, pecans, soybeans. They do have lots of calories so go easy on them. You only need a couple of tablespoons a day of nuts.
You can google "meat substitutes" to get more ideas for protein. That's what the meat is good for.
I also like soyburgers. They're good for meat substitutes. You get them in the frozen section of your grocery.
For some reason I can only remember the beans, soy and hummus for substitutes right now. But if you google, you'll find lots.

In this day and age no one actually has to cook to be healthy. There's too many foods in the frozen section that can go in a microwave to fix fast and are good for you. In a lot of cases, especially frozen fruit - oh yeah, use frozen fruit and yogurt to make wonderful, healthy smoothies - frozen fruit is actually better than fresh unless it's in season.0 -
For a smoothie, just put in some milk, frozen fruit, yogurt, nuts if you want crunch (or raw oatmeal if you want crunch and fiber). cover and turn on the blender. Add more milk if you want it thinner. The frozen fruit makes it thicker than fresh fruit.0

I've been there. But I learned that taking my own lunch was just a much easier route to go. I usually didn't have access to a microwave so I ate lots of sandwiches but mixed it up so I wouldn't get bored. I also mixted up the fruits and veggies I would take with my to eat with my lunch and for snacks. I would make my own 100 calories snack packs in a zip lock bag that were easy to grab and go. You just have to learn what is easiest for you and go with it; you will learn as you go along.
That's what I've been trying to do too.
I'm just worried the bread adds more calories/carbs than I need.
I've been thinking about making my own wraps.
Sounds easy enough, right?
I can get the turkey already sliced from the deli. Lettuce in packs. And a non-fat dressing.
Ta-da! Yummy lunch choice.
I was concerned about the amount of bread calories I was consuming too. I buy slimwiches now. They're usually $2-$3 where I live. Only 90 calories for the whole bun. There are some more expensive options but these work for me and my turkey sandwiches.

I work 50-60 hours a week in a restaurant and find it very difficult to eat healthy. It can be a struggle but you have to want to change. It sounds like initially you didn't actually want help, but slowly have lightened up and accepted some of the advice offered. Not eating is NEVER a good option. NEVER. I know you're trying to have slimfast in place of 2 meals and potentially skipping lunch, but eating a variety of good foods will always be better than slimfast. Tastes better in my opinion too. Try the freezer section. I get lean cuisines, smart ones, and healthy choice frozen meals. TV dinners aren't my #1 choice but they're usually cheaper than eating out and a lot less in calories. Soups are also an option. Snacking wise it sounds like you already got some great advice. I LOVE string cheese, which was already said a few times. Carrots are great but a mixing it up wouldn't hurt. Celery and peanut butter, apples, green peppers, cucumbers, grapes, kiwi, etc, all are easy to prepare and can be eaten as snacks. Also, the fruit and walnut "salad" from mcdonalds is delicious.0 -

I think people are trying to be supportive and help, and it will help if you think of it as a challenge you can rise to. It takes time and patience to learn to cook...ask friends for help.
Here's a personal example. My brother recently turned 43 years old. He's a perpetual bachelor and never learned to cook when we were younger. He is now learning to cook with a friend's help, because he is a runner, knows he needs to eat healthier to fuel his workouts, and would like to save more money by eating out less. If he can do this after 24+ years of living on his own and eating out constantly, you can too. Trust me. (And he's incredibly stubborn...it took family members and friends many years of encouragement before he decided to try it)
Quick and easy ideas for simple cooking:
Chicken breasts in a bit of olive oil in a saucepan, 5 or 6 minutes on each side, sprinkle on some lemon pepper or garlic powder for flavor.
Spaghetti--boil water, throw in pasta, stir, and boil for whatever the package says. Toss with a cupful of frozen vegies (nuke in microwave), a 1/4 cup of red sauce, and a bit of shredded cheese.
Sandwiches/wraps--tortilla, lean meat, vegies, slice of cheese.
Fruit and yogurt with a little cereal or granola for breakfast.
Hardboiled eggs...you can buy these in the deli section but it would be cheaper to boil them at home.
Let's see...I don't eat tons of red meat either...mostly chicken and fish...I also eat a lot of beans and rice which forms a complete protein...soy products are good replacements for meat, check the freezer section for Boca products. Um...nuts have good protein, but also a lot of fat, but are good in a pinch...
Feel free to add me and view my food diary if you want some more ideas...I get bored easily and am starting to mix up my food intake a bit, although my focus is on vegies, lean protein, and eating a variety of "colors" every day...

Initially I wanted to hear from people who felt the same.
As I stated.
Then I starting getting messages that actually hurt my feelings. (such as people saying "I do this, this, and this, so why can't you?) It seemed as though they were trying to show me that they were better than me.
Which I'm sure is NOT the point of this.
Then, thankfully, I got some nice people that wanted to share PRODUCTIVE input.

I would suggest maybe taking a sunday afternoon, and cooking a couple different things, then freezing them so you can pop them out in a jif during the week, Invest in a crock pot. no fuss no muss cooking0

Good luck on your health. It's great to hear from younger people who are interested in their health. I'm 60 and never thought about health until I was prediabetic and in my later 50s. You are doing the best thing you can for yourself. To sound like the grandmother I am, even though I don't know you, I'm proud of you.0 -
Everything that I have been taught is that we must eat to keep the metabolism burning.... the body goes into starvation mode without calories and that will ruin you as you get older.... I perceive that you are a much younger woman than myself... After many years of being over weight and yo yo dieting, I screwed up my metabolism... Maybe you should talk to a nutritional counselor to help you understand why eating healthy is so important.. I now eat several small meals a day and I do eat a lot of chicken and turkey for protein... I have come a long way but I have a long way to go yet... glad I found this site and the support these wonderful people offer. Stay well..0

sounds like me in grad school between school, an internship, and homework, i had very little free time and i essentially lived off 700 bucks a month. here were my staples on my grocery list:
baby carrots
cheese (either a block of cheese or cheese sticks - cheese block will be cheaper in the long run)
rice
beans/lentils
chicken breasts (expensive, yes. what i did was cut them in half - three breasts became 6!)
potatoes
pasta (whole grain)
soup
pita bread
i did a LOT of cooking on the weekends, when i did have some down time. i have no idea what your schedule is like, so if you have any time to spend at home cooking, then go for it! and i hear you - i can't cook at all. my husband tells me my food has no flavor. but here's the thing, if you like it - eat it. i can easily eat the same meal for like, a week.
if you're going to try to live out of a vending machine, go for things like pretzels, granola bars, animal crackers, etc., or anything with some protein in it too...maybe some peanuts or trail mix. the combo of fats and protein will keep you fuller longer.
honestly, the best investments i have made have been on lunch boxes, ice packs, and containers. yes, they're more expensive in the beginning, but they last! i've had the same containers for something like 4 years now. they're ugly and stained, but they still function. i like to pick up lunch boxes/ice packs when school's about to start. they're usually on sale then.

Crock pots are AMAZING for people who cant cook. Seriously. I have several friends who use them and can't use the stove or oven. There are a ton of recipes online for them too.

First, take a deep breath...you will do fine and you are stressing yourself out. All of this can and will be fun, and you will see!
Second, don't listen or pay attention to the negativity. Most have forgotten that they were in your shoes once. No one instantly knows how to eat healthy. That is one of the primary reasons why we are all here.
Third, there are many good tips given to you. Try them, one at a time. If one doesn't work, move on to the next. Make a list, or re-read the thread on a periodic basis so you can remember some of what others do to stay on track.
Welcome to the life of being busy! And fast food fits right in, or so that we have been told, until we realize its too late.
As I said, smile but don't starve. That's not fun. Make eating the correct foods a game and you will definitely win!0
