MINI ZUCHNINI PIZZA SLICES

Easy recipe to make:
1/4 cup olive oil
2 med sized zuchini's sliced (chip style) 1/4 inch slices
3/4 cup of sun dried tomato (paste) any brand will do
1 cup of shredded "fat free mozzerella cheese
Place slices of zuchini on a plate (2 if needed)
brush each slice of zuchini with a light coating of olive oil
Place in microwave high heat for 2 mins
top each slice with thin coating of sun dried tomato paste
sprinkle shredded fat free mozzeralla cheese on each slice
Place in microwave for about 1 min high heat - until cheese melts.
Serve with a nice glass of red table wine.
Get ready to sink your teeth into a great tasting low calorie appetizer or snack.

This sounds really good, but a 1/4 cup of olive oil?! Eeeeek!!!! I don't know how many this is supposed to serve, but I would severely cut down on the oil and the cheese in order to consider it a healthy/low calorie appetizer or snack.0
