bread crumb replacement

I am looking for a ideas on other things to bread baked chicken or baked veggies in. I love baked zucchini and usually used bread crumbs. Is some bread crumbs ok or should I stay away from them? Thanks for any ideas!!

    My fiance uses non-sugary cereal. I really like the Fiber-style cereals... healthy, but still gives the crunchy-ness and flavor of crumbs.

    **EDIT - You can cook it as is, but obviously crushing the cereal first and using egg and/or flour to "bind" it, works much better.

    I've heard of ppl using things like corn flakes and goldfish crackers........ although I bet even the bread crumbs and baking are a TON better than bleached flour and frying...

    I think that's a great idea!!!! Like Corn Flakes crunched up would be delicious as a coat on chicken or anything else.

  • As long as you count the calories in them I don't see why it would be a problem. I use panko bread crumbs to coat chicken and fish when we want something that seems fried but isn't.

    Just watch the sodium - the seasoned bread crumbs are really high in sodium!

    Most importantly, why not just skip it--and save that much calories and carbs???

    Using crushed cereals as previously recommended or crushed nuts like almonds or pistachios works as well.

    I also like crushed nuts like pecans, walnuts, and peanuts. Quite good on chicken and fish.
  • I've used rice bread crumbs (in the natural/organic/gluten-free section of the supermarket,) panko bread crumbs and corn flakes and all are delicious!

    My boyfriend uses bran flakes to bread fish, it turns out nice--Hungry Girl suggests Fiber One as a bread crumb sub.

    I also read that unsweetened wheat germ works nicely, and that you can find whole wheat panko bread crumbs in some stores.

    I generally make my own. It is super easy! I use 35 calorie bread, bake it in the oven until is is golden brown and crunchy, put it in a food processor with Mrs. Dash, black pepper, rosemary and italian seasonings, much more fiber, better for you, less calories and tastes better I think. enjoy!

    corn meal became my go to "bread crumb" when I first when GF.
