Zuppa Tuscano Soup

I found this recipe and altered it a little to make it a bit lower cal....its tastes pretty close to Olive Garden!

1lb ground turkey sausage
1.5 tsp red pepper flakes
0.5 onion chopped
1T minced garlic
4T crumbled bacon (I use the real bacon pieces found in the salad aisle)
5 cans low sodium chicken broth
6 yellow potatoes thinly sliced-skins on
handful of chopped kale (or you can use spinach)
splash of 1% milk

Brown the turkey sausage, red pepper flakes, onion and garlic in a large soup pot. Add in crumbled bacon. Pour in chicken broth and turn on high. Bring to a boil. Add sliced potatoes and reduce heat, cover. Simmer until potatoes are tender. Add in kale and just a splash of milk. Simmer covered another 5min until kale is tender. I guesstimated it serves around 8. Mmmmm!

    How funny, I just made my own version of this tonight, but without bacon, and skim milk instead of 2%.
  • I put it at 200 per serving when I put it in the recipe calculator
