A friend of my mom's is trying to go vegan, and she recommended Earth Balance Buttery Spread as a butter substitute.

I found it at the grocery store yesterday and melted it on a sweet potato tonight. It. Was. Delicious. I highly recommend it!
Not only did it taste like butter and have the texture of butter, one serving is a whole tablespoon, while a 'real' butter serving is just 1/3 of that.

For those that are allergic to soy, they also make a soy free one that's great. It's still got 2.5 grams of saturated fat per tablespoon serving, but that's significantly better than real butter.

Thanks for the tip. I use I Can't Believe it's Not Butter spray, but am always looking for new ideas on some old favorites
