Hello MFPrs
I need some recipies. My Borhter decided to go vegan when his employer decided to change health insurance policy price contributions based on their health ratings. So his birthday is the 23rd of this month and well we wanted to make him a nice meal. We however are not vegan so have no idea what to make for him.
Any ideas/recipes would be wonderful!!

My boyfriend is vegan. It is not easy; however, I try to make decent meals for him whenever possible. One quick option is to make a pizza, although, make sure you read the ingredients on the back, make sure it does not contain eggs or milk. I use a bit of evoo, lots of veggies I have around the house and garlic! No red sauce needed. Once, I made my own pesto, minus the cheese.
Also, I commonly make a pasta dish. Whole wheat organic pasta, red, yellow and green peppers, onion, garlic, tomatoe paste, and 2 cans of petite diced del monte tomatoes in olive oil and garlic. Allow all the ingredients to cook slowly in evoo. Cook pasta el dente. When veggies and are soft and tomatoes are beginning to boil in the sauces add pasta. Top off with a nice amount of white wine. Then simmer for about 15-30. The longer the better. However, when you do this you need to keep adding more wine and evoo to keep it moist. Hope this helps!0 -
