I Need Easter Cookie Recipes

Hello everyone!

I'm looking for some good healthy Easter cookie recipes. I want to bake cookies with my daughter on Easter, but I don't want to bake cookies that I can't eat.

Suggestions???

  • meringue cookies. if you're religious, you can make them into mounds, let them cool in the oven over night and then break them open to see that Jesus had risen and the tomb was empty... they'll have to be made the night before... but you get the idea.

    or just little meringue cookies. super low in fat/cal since they're egg whites.

    I bought a book on QVC last year called "Eat What You Love" and it is great for weight loss & diabetes diets.

    Here's a recipe:

    Amazing Peanut Butter Cookies (makes 24 cookies)

    1 cup peanut butter
    1/4 cup splenda granulated sweetener
    1/4 cup packed dark brown sugar
    1/2 teaspoon baking soda
    1 teaspoon vanilla extract
    1 large egg

    Preheat oven to 350 degrees. Combine peanut butter, sweetener, brown sugar, baking soda and vanilla in medium bowl and stir until mixed. Add egg and stir until dough is formed.

    Shape the dough, by level tablespoons into 1 inch balls. Place on ungreased baking sheet and flatten balls with fork, form a crisscross pattern on top of cookie.

    Bake for 9 to 11 minutes, or until cookies are golden brown on top but slightly soft in center. Remove from oven and let cool for 5 minutes then put on wire racks to finish cooling.

    Rice krispie treats aren't too bad. There is a commercial on TV right now. You take a plastic egg that opens in the middle, and spray it with pam, smush the rice krispie treat batter in it. Then you open it up and pull out the egg. It shows the egg is hollow inside the RC batter. Before you put the 2 sides together, your kids can throw in some MM's and then the eggs rattle.

    I feel ya.
    I'd cut the recipe in half and add unsweetened apple sauce instead of shortening or butter

    Other idea....make soda cupcakecake s 1 cake mix and one can of diet soda. Let them decorate the tops, some with icing, some with cool whip ff...or make bird nests with cocunut and put 2 little jelly beans in each The cupcakes are 88 cal before decorating.

    Or cupcake made with 1 cake mix and 1 can pumpkin (spice cake mix good) Don't add anything else. they are 93 cal each and good w/o decorations.

    You gotta do something with the kids!!!
    oh yea, immediately wrap and freeze half the cupcakes.....LOL

    Easter Egg Cookies

    YIELD: 28 cookies (serving size: 1 cookie)

    Ingredients
    Cookies:
    1 1/2 cups all-purpose flour (about 6 1/2 ounces)
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup granulated sugar
    1/4 cup butter, softened
    1 teaspoon vanilla extract
    1 large egg
    Icing:
    2 cups powdered sugar
    3 tablespoons fat-free milk
    1/4 teaspoon vanilla extract
    Food coloring (optional)

    Preparation
    1. To prepare cookies, spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, and salt, stirring with a whisk.

    2. Place granulated sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (about 5 minutes). Beat in 1 teaspoon vanilla and egg. Add flour mixture, beating at low speed until blended.

    3. Place dough between two sheets of plastic wrap. Roll dough to a 1/4-inch thickness. Chill 1 hour.

    4. Preheat oven to 375°.

    5. Cut dough with a 2 1/4-inch egg-shaped cutter. Place cookies on a baking sheet lined with parchment paper. Bake at 375° for 8 minutes or until edges of cookies are browned. Cool cookies 1 minute on pan. Remove cookies from parchment; cool completely on a wire rack.

    6. To prepare icing, combine powdered sugar, milk, and 1/4 teaspoon vanilla; stir until smooth. Add food coloring, if desired. Stir well. Spread or pipe icing onto

    To Fitzie63:
    I am not going to take away the chance for my daughter to have the memory of baking cookies with her mommy just because I am trying to lose weight. She helps me cook healthy meals all the time, so I do not see any reason why we can't bake yummy cookies together for Easter.
