ideas for topping the lettuce

I'm a very picky eater but i have learned to deal with the taste of lettuce with balsamic vingerette. I don't eat tomatoes or onions so I was wondering if anyone had any ideas for some different toppers. Tonight I plan on having baked chicken with a side of lettuce w/??? any ideas??

    broccoli, peas, black beans,corn, black olives, cucumbers, carrots, green pepper, red pepper, yellow pepper, lf cheese, pea pods- all things i love in salads!!

    If you're a picky eater it's hard to suggest anything because you may not like it. I would suggest you eat things you don't like - if for no other reason than you need the diverse nutritents in a variety of vegetables. Recently even I have discovered that I don't actually hate brussel sprouts and green beans after 35 years of thinking that I did! LOL

    I load my salad with whatever is in my vegetable drawer: spinach, green beans, broccoli, carrots, onions, tomatoes, bell peppers, cucumbers, sprouts and maybe add some kidney beans or chickpeas.

    I have gotten used to JUST balsamic and black pepper on my salads.

    I love roasted red peppers, a few calamata olives and goat cheese!! So yummy!

    Hmm olives..might be good. The only others I saw that I would attempt are green beans and peas, I don't have these as fresh veggies though so I guess thats out for tonight. If I acutally eat lettuce with olives and b.vingerette I will be very shocked..and proud.

    I like having Lots of lettuce with a tablespoon of low fat hummus, I even use this as a filling in my pitta bread!

    Why even eat the lettuce at all? There's hardly any nutritional value in iceberg lettuce. Your better off just eating a side of veggies that you do like: like the peas & green beans. Perhaps you can start trying to mix some baby spinach in with your iceberg if you really want a salad.

    I totally agree! I used to think I hated hearty greens like swiss chard and collards and winter squashes like butternut, but I actually LOVE LOVE LOVE THEM! It's all in how they are cooked. Since I've started really cooking, I have found that there are very few foods I dislike. . Onions?? I could caramelize onions and eat at least 5 of them in one sitting. OMG, Yummmm! Grilled onions are the bomb too. However, if you cut up an onion and cook it in the crockpot it's totally gross to me. You just have to keep cooking and trying

    I made a big salad with lettuce, grilled chicken, tomatoes (or salsa), 2% shredded cheese, refried beans and light sour cream...no dressing needed and delicious!!

    I like random stuff in my salads (I call them little surprises). So I think strawberries or dried cranberries. Really, anything you like would be perfect! I think you should tryout things you wouldn't normally eat, but you shouldn't torture yourself to eat things you hate. And I hope you're not eatting Iceberg! YUCK! My husband thought he hated lettuce because his mom only bought iceberg growing up. Then I introduced him to Romaine...now he loves salad. Romaine is so much yummier and better for you too!

    Good luck, I was not a salad eater for many years but I have come around. The nice thing about salad is you can make it whatever you want it to be. I think of it as refrigerator velcro, throwing anything I know I like in the bowl and seeing what works well together. Take into account things like crisp, crunch, soft, creamy, bitter, sweet, salty, sharp a contrast always makes for a good finished dish. The other thing I consider is how I'm doing with my nutrients for the day, do I need more protein? (Almost always YES) and how can I include more in my salad?

    Some of my favorite salads:

    Orange Almond: mandarin oranges (packed in juice no sugar added) toasted almond slices, romaine lettuce

    Beet Salad: Beet greens mixed with romaine or butter lettuce, beet slices, goat cheese, toasted walnuts, asparagus or green beans

    Strawberry Salad: Spinach leaves, sliced strawberries, feta cheese, toasted walnuts

    Spinach salad: Spinach leaves, hard boiled eggs, bacon crumbled, red pepper strips

    I also like a simple salad of romaine lettuce, a little good parmesan and chicken dressed with lemon juice and olive oil.

    I top lettuce with feta cheese, walnuts, sunflower seeds, avocados, strawberries, or dried cranberries (when I can find some that haven't been loaded with sugar) - or any combination of the above.

    Chopped herbs add a lot of flavor to plain salads! Flat leaf parsley and cilantro are delicious. A sprinkle of sunflower seeds is yummy and adds a bit of crunch.
