This is a yummy little meal that feels like a splurge, but isn't terrible on calories. Plus, kids love it!

Chicken Taco Rice

Ingredients:

12-16 oz boneless skinless chicken breast
1 can low sodium chicken broth
1 can tomato sauce
1 packet taco seasoning
1.5 cups instant brown rice
1/2 cup shredded cheddar cheese
Baked Tostitos Scoops

Cook chicken breast in a little water until opaque, and cut into bite size pieces. Add tomato sauce, chicken broth, and taco seasoning. Bring to a boil and simmer for 10 minutes. Add rice, cover, and remove from heat. Let stand 10 minutes or until all liquid is absorbed and rice is tender. Sprinkle with cheese, and serve with chips.

Serves 4

One serving is about 450 calories when made with 16 oz of chicken and served with one serving of the Tostitos. Yum!
