Recipies with Soy Milk

I'm slowly trying to convert myself to drink soy milk instead of cow milk (I have changed from 2% to 1% the last few months so I'm proud of that, but I LOVEEEEEE milk)... I've been told my more than one person that after about age 19-20 that you shouldn't drink as much milk not only because it's not really needed anymore but your body slowly stops being able to break it down. So, I'm trying to convert to soy milk. Does anyone have any recipies for soy milk desserts or smoothies or anything? I was thinking of blending a banana in my soy milk (it's vanilla flavored but when I was little my aunt used to drink her slim fast with a banana in it and it was delicious to me, that's what it reminds me of, I figure it'd taste similar to that)... any ideas?

    I use soy milk for anything. I've yet to find a recipe where it doesn't substitute perfectly for cow milk.

    If you're looking to replace cow milk, I suggest almond and coconut milk as well. I love to make my homemade oatmeal with almond milk, it adds a delicious flavor.

    I second trying almond and coconut milk. Like anything, soy is good in moderation. Yes, use it as you would use milk. Freeze some banana, add some natural peanut butter, and blend it up.

    I don't do anything special with drinks, but I make awesome soy milk pancakes. My son has a milk and egg allergy, so we had to get creative. My husband likes them even better than the old milk and egg recipe.

    Soy Pancakes

    1 cup flour
    1 tbsp sugar
    2 tsp baking powder
    1/4 tsp salt

    1 cup soy milk
    2 tbsp vegetable oil (or apple sauce if you want less fat)
    1 tbsp water (to replace the egg I leave out)

    Mix the dry ingredients in one bowl and the wet ingredients in your measuring cup or another small bowl. Add wet to dry, stir until just mixed, will still be a little lumpy. Let sit for about 5 minutes while you heat up the pan or griddle. I use a 1/4 cup scoop to measure it out and it makes 8 pancakes. Light, fluffy and very tasty!

    Per serving (2 pancakes): 215 29 8 5 109 353

    I do NOT like coconut milk at all. I went to coasta rica on a mission trip when I was 14 and we (stupidly) climbed up the trees and got a coconut, cracked it and drank the milk, ew. Anyway. I will try almond milk. I'm really picky when it comes to food so it's hard for me to try new things and like them, although I will say, I do like soy milk. Is it truly better though than cows milk?

    As far as the pancakes, I will have to try them. I haven't been eating pancakes or waffles for my insatiable urge to smother them in butter, jelly and syrup. =D

    So excited to try this recipe for my daughter today! She is 14 months old and has an egg & milk allergy. It's all mixed up and the batter is resting. Looks and smells just like the real thing so far! I added 1/4 tsp of vanilla extract because I'm used to that in my regular pancake recipe.
