Anyone have a recipe for baked sweet potato fries?

I have tried a thousand recipes for baked sweet potato fries, and they have all been disappointing - they taste good, but they are limp and soggy and not really like fries at all. I am afraid you have to deep fry sweet potatoes in order to get any crispness, and that kinda defeats the point!
When I have sweet potatoes to spare, I either bake them up and top them with a little bit of butter and cinnamon, or I'll roast them in a hot oven with herbs and a little bit of olive oil.0 -
heat oven to 425 degrees F
for 2 people, cut ONE sweet potato into 8 or 16 length-wide wedges
toss with some pepper a 1/2 tbsp of olive oil...or spray with PAM (we also add chipotle chile pepper and some cinnamon for a kick)
spread out on a non- oiled baking sheet
put in oven for 10 minutes, then take out and move them around. Put them back in for another 10 and take out and move them around....basically repeat until they get just browned. it usually takes about 20-30 minutes total.0 -
They are difficult to cut so get out a good knife-peel the sweet potato, cut it in thin lengthwise strips. Preheat the oven to 350. Place them on a cookie sheet, toss them with about 2 tbsp of olive oil. Cook them for 30 minutes and check for doneness.
They are also good placed in a skillet and sauteed for 10 minutes. Lastly, cooked in the microwave for 3 minutes is the easiest of all-0 -
So they don't turn out as soggy, try adding a tsp of corn starch0
