Roasted Eggplant and Garlic Hummus

I am obsessed with this recipe and I make a batch weekly and eat it everyday. Even my kids and Hubby love it and they don't like hummus. We use as a dip,hummus and cream cheese sandwiches, on sandwiches instead of mayo. It is super yummy!!! I dip iy with fresh vegetables and pita chips! You can make it without the eggplant and just do garlic hummus or add roasted red peppers, whatever your preference:-) Enjoy!



one eggplant peeled, cut up and roasted with a drizzle of olive oil and salt & pepper. 350 for about 45 min turning often

two small cans (or one large) chickpeas/garbanzo beans- drain but save liquid

1/3 cup of tahini- usually sold near peanut butter

1/4 cup lemon juice

2 heaping tsps of minced garlic

1 tsp salt

put in food processor or I use an immersion blender. Blend while adding the chick pea liquid until blended to smooth paste and at the consistency you like. I use about 3/4 of the drained liquid. It tastes even better the next day so I usually make ahead of time. very yummy and healthy!!!

    It sounds awesome, I love hummus, I put it on everything I use it instead of mayonnaise on my sandwiches. I am going to try your recipe. Thanks for sharing!:happy:

    Is this also called baba ganouj? I tried some of that the other day it was eggplant and chickpeas mmm

    it is similar to baba ghanoush I think because I put eggplant in it. The original recipe I had was just for the hummus, I had roasted eggplent leftover and decided to try it and I liked it even more. If you liked the baba ghanoush you will love this:-) Thanks I hope everyone likes it:-) I bring it to every party I am invited too and get rave reviews...also I know there is always something for me to eat when I go to parties:-)
