Oven Roasted Sweet Potato Chips

(feel free to cut the recipe in half to avoid the "left-over chip syndrome")

OVEN ROASTED SWEET POTATO CHIPS

INGREDIENTS:

3/4 pound sweet potatoes
1 Tbsp olive oil (or liquified organic cold-pressed extra virgin coconut oil)
1 1/2 tsp chili powder
1/2 tsp sea salt
1/4 tsp ground cumin (more if desired!)

PREPARATION:

Preheat oven to 425. Cut potatoes into thin slices with mandolin; set aside.

Combine 1 Tbsp oil, 1 1/2 tsp chili powder, 1/2 tsp sea salt, 1/4 tsp ground cumin. Add sweet potatoes; toss gently to coat.

Cover a very lightly oiled (pam spray) baking sheet with a single layer of potatoes; roast, turning once, until golden and tender (about 20 minutes).
