I have been trying to nail my poached eggs all week, I can't do it! They end up looking terrible. I mean, they taste okay but they are not good. Any tips??

I use Delia's absolutely fail-safe method - just simmer it for a minute and leave it in the hot water for 10.

I'm in the same boat! There are so many conflicting ways out there. Some say to add vinegar to the water, some say absolutely do not. Some way to stir the water in one direction and slip the egg in going into the swirl, some say absolutely still water. I'm going to keep my eye on this thread to see if anyone else has luck!

I wrap mine in clingfilm - never goes wrong and they come out perfectly shaped. Just simmer for 4 mins (for a large egg)

I don't bother with the clip (I just wrap the cling film around itself) but like this:

With some vinegar in the water bring to a boil in a pot. Stir until it creates a whirlpool, slip the eggs in one at a time stirring in between. 4 minutes for soft. Always perfect.

absolutely still salted (rolling boil) boiling water. take the water of the heat. drop in your eggs. turn heat down to med. put pot back on. check with a slotted spoon after about 1min 30secs. the water should bubble a bit, bouncing the eggs around. btw, you need lotsa water. i only make poached eggs and make them a few times a week...they always turn out perfect using those steps.

    good luck! don't give up!

Well I am all set to make poached eggs tomorrow (Providing I get up in time!) Wish me luck everyone.

In other news, I have ordered some chapati flour as I'm going to make my own! THIS IS EXCELLENT NEWS! :)

I recently purchased some silicone egg poachers at a kitchen shop and they work perfectly. You simply boil water in a pan, spray the individual silicone pouches with Pam, crack an egg into each, place into several inches of boiling water, reduce eat, cover and steam for 4 minutes. All you have to do is carefully remove with tongs and gently tip onto a plate. They are perfectly contained, shaped and cooked. These silicone poachers are the best kitchen gadget I have purchased in a long time. I highly recommend them. You can find them at amazon.com. There are several brands but I purchased the Fusionbrands Poach pods. Good luck!
