Hey! I have some boneless chicken breast in my freezer and would like some fun, easy recipes to make tonight or tomorrow?
I tend to think chicken is dry, so just grilling it or something wont work for me. I wont eat it. I want something that is creative but easy and cheap. I dont want to spend alot of money on other ingredients. Thanks!!

I find that if you heat a frying pan to about med-high and add 1/4 cup of water and what ever seasoning you want then cook the chicken in the pan it makes it very moist. Add more water if it evaporates but don't drown it. Also baking in the oven in tomato sauce makes it juicy.0

buy a bottle of bbq sauce. Cook the chicken in the crock pot for 6-8 hr on low. Shred the chicken, pour a bit of water and the bottle (or half- depending on how saucy you like it) and let simmer 20 mins in crock. Enjoy on a light wheat hamburger bun!0

I like to boil chicken and then shred it up to make chicken salad, chicken and rice or even buffalo chicken chili or bbq0

I grill it with a can of low sodium soup...My favorite is French onion (sometimes I will add mushrooms too)...but I have used the low fat cream soups as well...sometimes I will add veggies to give it a "pot pie" filling effect.0

Pepper, onion, salsa, light sour cream and whole wheat tortillas make great healthy fajitas!! Throw some cumin and chili powder on the chicken or one of those fajita packets for seasoning! yum!0

my friend gave me this recipe:
Jar of spaghetti sauce
Low moisture part skim Mozz. cheese
3-4 Chicken breast s(5 oz each)
Angel hair pasta
Put 1/2 the jar of spaghetti sauce on teh bottom of the pan and put the chicken on top of the sauce. Pour rest of sauce over the chicken breasts. Bake in 375 degree F oven for 1/2 hour.
Put 2 Tbsp of the cheese on top and put back in oven for 5 minutes.
Serve over Angel Hair pasta (1 c. cooked = 2 oz. dry). Enjoy.
You only end up eating about a 1/2 c. of the spaghetti sauce, the rest just keeps it from drying out. Cal. count depends on the weight of the chicken and what kind of pasta you use (I use whole wheat, which is higher cals but also better carbs for you).0 -
Monterey Chicken:
1 boneless skinless chicken breast
1 tbsp. BBQ sauce
chopped green onion
rotel tomatoes
fat free shredded cheese

Oven roast it, cover half with BBQ sauce and melt some chedar cheese over the other half. MMMmmm one of my favourites!0

Trim breast, sprinkle with Mrs. Dash, spray oven pan with non-stick spray and bake at 350˚ for 20 minutes. Super tender and easy:bigsmile:0

Stir Fry? I also cut it into cubes, saute it in a little olive oil and garlic, add a can of tomatoes or sauce, italian seasoning and serve it with pasta. You can also add onions and peppers if you like. I sometimes add a little cooking wine for extra flavor. You can also use it sliced thinly as a sub for ground beef in tacos. Chicken fajitas are another option. Also, I find if you marinate a boneless breast over night and then grill it on low heat on a piece of foil, it doesn't get as dried out. simple, quick and cheap: marinate in italian dressing for about an hour (or longer is ok!) , cover with foil in baking dish, and bake in the oven.. don't vent , be patient, and it will stay moist.
i also like to bread it in whole wheat bread crumbs and cook in a small amount of olive oil and then drain/pat the excess oil off.. the bread crumbs keep it moist...0 -
chicken soup with what ever vegetables you have on hand, then spices to coordinate. I love enchilada soup, with spicier seasonings corn, peppers, onion, zuchini and then just toss the chicken breasts right in there. You can do it in a crock pot so you don't have to worry about it. If you want really juicy chicken, I will toss the frozen breast in a pan with liquid and seasons of some kind, cover it and let it cook til done. I use a meat thermometer to test mine. Once its done, let it rest on a cutting board for about five minutes, then cut on a biased. Serve over pasta, rice, steamed veggies, salad, anything. Letting the chicken rest, before cutting it, will ensure all the juices settle back into the meat.0

I put a little bit of olive oil in a pan and heat in on med-low-ish. I then season the chicken with Tone's garlic and herb seasoning and some cayenne pepper (i use a lot). I pan fry it until just barely done so that it stays juicy and then let it rest for a couple of minutes to make sure it's cooked through.0

I like to brown it in a skillet with olive oil, italian seasoning and mushrooms and throw it over a bed of mixed baby greens lettuce. Healthy and easy! Or bake it in a 350 degree oven and put some fat free cream of mushroom soup over it. Yummy!0

I do this for the chicken I use everyday for my salads.
Pre-Heat the oven to 425 degrees
Put foil on a baking sheet foiled the foil sides up slightly
Add chicken breasts (thawed cooks faster)
Add a little bit of italian dressing (I used Kens Healthy Choice italian with red pepper..lower cal than most)
Add preferred seasonings (I prefer red pepper flakes, dash of pepper, parsley, or rosemary)
Take another pieces of foil and cover top, closing the sides together.
Cook for about an hour (give or take depending on the breasts)
It comes out sooo juicy and tasty0 -
To make chicken less dry, soak it over night in brine (salt water). When you cook it, put it in a covered dish and use a thermometer in the center of the thickest piece. Take it out at 160 degrees and it should be super moist and delicious.
I usually cook a couple of pounds of b/s chicken each week.0 -

Chicken and asparagus stir fry
2 tsp reduced-sodium Kikkoman soy sauce
1 tsp. honey
2 tsp. seasame oil
1 large bunch of asparagus (1 3/4 lbs) trimmed and cut into 1 in. pieces
1 clove of garlic, minced (or tsp. of bottled minced garlic)
2 1/2 c. of cooked chicken breast (I just pan browned it prior to starting and it was good)
1 tsp. seasame seads (optional)
Combine soy sauce and honey in small bowl and set aside
Heat oil in large skillet/wok over medium-high heat. Add asparagus and garlic. Cook 4 minutes, stirring frequently.
Toss in chicken adn soy sauce-honey mixture and heat thoroughly. Remove from pan with tongs
Serve over brown rice or whole wheat couscous.
Sprinkle with seasame seeds if desired.
Stir fry only: 180 cal. 8 g. protein, 7 g. carbs, 5 g. fat, 1 g. saturated fat, 65 mg. cholestorol, 2 g. fiber, 160 mg. sodium.0 -
I love chicken and my family's favorite is when I make Cola Chicken... It can be made in either a crook pot or you can simmer it on the stove in a large pot. It's very simple and yet very tasty
1 12oz can of Diet Coke(pepsi doesn't taste right)
4 chicken breast
1 cup of low sodium Ketchup
add all ingredients together in pot and bring to boil reduce heat and let simmer stirring occasionally until chicken is cooked through..
Sorry I've never made it on the stove top so not sure how long it will take I usually make it in the crockpot and let simmer all day from noon to five.
Also I like to serve it over some whole grain brown rice and asparugas tips YUM!!!0 -
My favoriteeeeeee is curry brown sugar chicken!
Pat chicken dry
Season breast with salt/pepper or Nature's Seasoning on both sides. Sometimes I add a lil garlic powder too.
Season (I cover it heavily!) with curry powder both sides
Cover/press/pack on light brown sugar on both sides
Place in lightly greased baking dish/pan
Bake in oven I usually put it at around 400 degrees for 20 mins or so. Until the internal temp is 165 degrees.

Or Honey Chicken
Season breast with Nature's Seasoning
Place in small pan (I use a small frying pan that is oven safe)
Cover in honey
Bake in oven at 400 degrees, turning halfway.
About 20 minutes or so until chicken is cooked through (165 degrees).

Last week I discovered that by slicing it, then frying it with some salsa and greek yogurt, it stays moist and it taste great and creamy without all the fat from a regular creamy sauce.0

I make spicy chicken soft tacos. They can be low calorie and healthy just watch the cheese! lol
To make the chicken filling:
(this makes enough for three tacos for two people)
10 oz. of boneless, skinless chicken
1/2 onion
1 tbs butter (I use country crock with calcium)
1/2 c. enchilada sauce (I use red sauce that is hot)
1/8 c. shredded cheese (14 grams)
I poach my chicken and shred it.
Saute onions in 1 tbs. butter
add shredded chicken to the onions. Then I add a dash of cumin, garlic powder, pepper, and chili powder to the chicken.
add the cheese and enchilada saude to the chicken and onions.
This chicken filling should be about 435 calories for the whole skillet or about 218 per person.
Then you count for your tortillas. The ones we use are 210 for 3 tortillas.
These are really good with guacamole and we use one Wholly guacamole 100 calorie packet for three tacos.
That is about 528 calories per person for dinner. We try to keep our dinner around 600 calories so it works for us!0 -
4 Boneless, Skinless Chicken Breast Fillets
1/2 cup Feta Cheese, divided
2 tsp. Lemon Peel, divided
1 tsp. olive oil
1 bag baby spinach
1 cup cherry tomatoes
kalamata olives (check for typical serving size)
1.Mix half of the feta cheese and lemon peel. Cut a slice into the center of the chicken breasts, stuff with feta mixture.
2. Heat oil and cook chicken over medium-high heat until cooked through.
3. Serve over mixture of baby spinach, cherry tomatoes and kalamata olives, sprinkled with the rest of the lemon peel and feta.
I think I got this recipe from Better Homes & Gardens. So I typed this up from memory as best I could, it was delicious!0 -

I also cut it into strips and cook it in a small amount of olive oil, mix it with some cooked brown rice and a tablespoon of Philadelphia cooking cream. I will add whatever veggies I have on hand too.
