I need to get more veggies in

What are your favorite fresh veggies to munch on. I have a serious snack problem and need more veggies any way so what better way to satisfy both needs! Got any ideas?

  • I like cucumbers, green bell peppers and baby carrots to eat with some roasted red pepper hummus. Yum! I also add fresh baby spinach leaves to my wraps and sandwiches.

    I felt I was having the same issue as well so I've been making a green smoothie in the mornings. It's really yummy and I fill it up with spinach and other greens. I put half a frozen banana, frozen berries, milk, spinach and other greens. You could also add in flax or oats to it. Here is a website with lost of ideas.

  • I like raw veggies. I haven't thought about using hummus with them - sounds delish!

    I stick with green veggies, they aren't as starchy.

    lettuce wrap with a piece of boars head chicken breast.. yum! Also, the veggies with hummus! Great snack! Egg white omelette just add the veggies you want.

    Just this weekend I discovered raw zuccini (spelling??) They were cut into this strips. THey dont have much taste but the texture is great. If you dont like them plain, try with a lite dip or in a salad. THey were great.

    I try mixing veggies in with what I'm already eating. Add a little broccoli to your macaroni and cheese, dice up some peppers or tomatoes to add to your pasta. I'm not a huge salad person, but I try to toss some spinach or romaine lettuce in some olive oil and lemon juice every once in a while. Pizza is also a great food to add veggies. Add a few more tomatoes to the sauce, dice up some onion, peppers, olives, mushrooms, etc. It's easier to eat veggies when you don't feel like that's all you're eating.
