Looking for low cal full roasted chicken recipes!

I'm looking for good recipes also. I've made soup too. You have to put it in the refrigerator overnight to let the fat rise to the top and then skim it off. It worked pretty good after putting veggies and a little wheat pasta in it.0

I just grind salt and pepper over the whole bird, then bung it in the oven for a couple hours :laugh: I didn't realise there was a recipe necessary to roast a chicken.
leftovers I use to make chicken, bacon, cranberry & brie pizza
Then the carcass gets simmered in the slow cooker (as mentioned, put the stock in the fridge overnight the fat will rise to the surface and harden and you can just lift it off, I keep it in though it gives the soup a good flavour) and the stock and meat from that either makes soup or risotto0 -
when i do cook a full bird , I like to put rosemary and thyme under the top skin of the bird and then rub a little evoo on the top and sprinkle with pepper and garlic . or you can cut into it small area and push garlic cloves into it also.
if your wanting to make broth you do have to let it cool and then remove all the built up fat from the broth so its not there. I like boil chicken but I butcher it up first and put carrots, onions, squash and celery in there with it and cook it and then you have a nice chicken soup.0 -

I do something really similar. I also sprinkle rosemary on mine, squeeze half of a lemon on it and then stuff it and half of a onion (large chunks) in it and roast it. When done I use the carcass to make broth. I do mine is a slow cooker too and basically throw what ever veggies I have in there with it. I store my broth a cup at a time in plastic bags and freeze!0 -
Rosemary baked chicken is my absolute favorite... for leftovers... chicken tacos with steamed tortillas - not fried with lots of lettuce, tomatoes, I don't like cheese or sour cream... but Tostitos Creamy Ranch yummy....
or put chicken over salad.. spinach salad...

I salt and pepper the skin, and shove about 5 or 6 garlic cloves in the cavity for beautifully perfumed chicken.
With the cold leftover chicken, I usually make a risotto - onion, whatever veg you have lying around, rice and a big blob of pesto - perfect!0
