Ricotta Spinach Turkey Burger

A modification of a knockoff of a Cheddar Spinach Chicken burger sold at Costco.

They're really easy to make. I just drained the spinach and squeezed out all the excess water I could. Add everything to a medium to large mixing bowl and mix well with hands. Use 1/2 cup measure to ensure even size, shape and portions. I then pressed them gently with the bottom of the spinach can (washed of course!) to flatten out slightly.
Broil about 3-4 inches away from element for 7 minutes on each side.
I got one report that they were "good" but with little enthusiasm. I'll give my review after I get to eat!

Here's my review:
They are tender, moist yet firm and flavorful with a gentle crust on the outside. I really used less than a 1/4 tsp of cayenne more like an 1/8th or less even and yet it's still prominent. I think these would be great on roll but they're really good without. It's a nice way to get the spinach in without it being overbearing.
