The problem with one pot dishes is, you need some kind of sauce or gravy (really bad). When you add these things you add a lot calories and a lot of sodium. The only one pot dish I think is not bad is sauteed Chicken or fish. Remove meat and Add fresh vegetables (what ever your family will eat) sautee until just tender. Add a little low salt chicken broth, lemon or Tbls dijon mustard. Put meat back in and cook together for a few min. Serve over a 1/2 cup of whole grain rice.
You can make a lasagna but instead of making it with noodles make it with zucchini, squash or eggplant. I think someone posted a couple recipes and everyone seemed to like them. I'm sure if you asked you would get a lot of lasagna recipes.
I make a vegetable soup with low sodium broth and add white beans instead of meat. Again I don't know how picky you are.
 Good luck.0

            Black Bean Chili
 1 TBSP Veg. Oil
 1 Onion Diced
 2 Cloves Garlic, Minced
1.5 LB Ground Turkey (99% Fat Free)
3 (15 oz) Cans Black Beans (undrained)
1 (28 oz) Can Crushed Tomatoes
 1 1/2 TBSP Chili Powder
 1 TBSP Oregano
 1 TBSP Basil
 1 TBSP Red Wine Vinegar
Saute onion and garlic in oil, add turkey, cook thoroughly. Add black beans...DO NOT DRAIN. Add spices and vinegar, done & delicious!
Love this recipe, my favorite, remember not to drain the beans, the chili needs the liquid. The vinegar adds a nice flavor, you will love this quick and easy recipe!0

I can give U a basic crock pot receipe that is easy to put together in the morning and have dinner all done when U get home from work. I am a stay at home mom but that doesn't mean I stay home ...I am on the go alot but we don't do fast food since we started dieting. I love making homemade soups and stews that go right in the crock for dinner. This one off the top of my head is homemade chicken noodle soup. I use boneless skinless chicken theighs but U can use chicken tenderloin also. I measure everything for portion control. 3oz meat per person (I have a family of 4 so I would use 12 oz chicken cut up). First I put about 6 cups of boiling water in crock add veggies like cut up baby carrots, chopped celery, minced garlic ( i use the already minced in a jar saves time). scallions and onions chopped. chicken boullion cubes 1 for each cup of water. U can boil the noodles and add last if U don't like them mushy. A little salt and pepper and let it sit till dinner!! For the veggies U can use whatever portion U would like or what U have availible Its up to U. Hope this helps 0 ...I am on the go alot but we don't do fast food since we started dieting. I love making homemade soups and stews that go right in the crock for dinner.
