Let's start at the beginning. I am having trouble with the protein measurements on this site. I have a large, lean pot roast cooking today that I plan on eating for dinner. Now, I was under the impression that if I were to eat 3 oz of the roast, I would be eating somewhere in the ball park of 60-80 grams of protein, using the logic that one oz. is approximately 28 grams. Add in any water the meat will absorb while slow roasting, subtracting some of the fat that comes out as it heats up, I am sitting near 70 grams of protein, right? However, while entering it onto the myfitnesspal meal tracker, the 3 oz of roast is only about 21 grams of protein. Please, can someone explain to me what happened to my other 40 grams of protein?

mmm, no, not by my calculations at least. 3 oz of lean chuck beef (pot roast) is between about 25 and 30 grams of protein total. But I guess 21 grams is in the realm of possibility. 60 to 80 is far to high for 3 oz.0

My first question, before any further info can be given, would be where did you get the nutritional info that you are referencing for the 60-80g of protein for what you are cooking?
If you have an actual label that came with the meat, enter that labels info into your foods to log it.
If it's from somewhere else, then I'd suggest looking up the info a few more places and finding what seems the most common.
Also remember that meat serving sizes are raw weight, not cooked weight. So any info you have for 3oz of pre-cooked roast will be very different than 3oz of cooked. (cooked meat weighs less)0 -

1 oz of lean chuck beef does not convert to 28 grams of protein. 1 SERVING converts to 28 grams, a serving is 3 oz.

Muscle is mostly water. That roast is probably 70%+ water weight uncooked. So using your math 18-24 grams protein. 6-8grams per ounce.0

because some of that weight of the meat is fat and other stuff that is not protein0 -
I just looked and the 21g is MUCH closer to the actual for 3 ounces. The 70something grams is for a POUND or uncooked beef.0

It's not 84 grams of protein. Most of it is actually water.0 -
I believe that the 28-30 g. of protein are for a full serving, which is generally 3 oz. Which means that an ounce of meat provides about 9-10 grams of protein. Check out this website to by the USDA, this is where I get a lot of the nutritional information on some of the foods I eat. http://www.nal.usda.gov/fnic/foodcomp/search/
Type in "pot roast" on the search (KEYWORD) box, then choose the one you want (there's quite a few listed), SUBMIT (at the bottom) )then click on the amount you are interested in, and SUBMIT again.

I ate 12oz of chicken breast (about 353g of chicken) and it only had 66g of protein. I doubt 3oz of pot roast has that much lol - if it does, I'm eating pot roast every day of the week!0

Just because one ounce equals 28 grams does not mean one ounce of beef is 28 grams of protein. What you're doing is just converting ounces to grams. What everyone else is saying is that one ounce of beef, which would WEIGH 28 grams, includes about 7 to 9 grams of protein. So 3 ounces, which would WEIGH 84 grams, includes between 21 and 27 grams of protein.0 -
