Buffalo chicken cakes
Was craving hot wings one day so I looked in the fridge and threw this together. It came out amazing.
10 oz can chunk chicken - I used swanson
2 eggs
4 TBS buffalo wing sauce
10 saltines. - any binder would substitute
Preheat oven to 400
I mixed the chicken, eggs, and sauce together. Working on the chicken to get the chunks as shredded as possible.
I then crumbled saltines into it a few at a time until I got the consistency I wanted to form a patty.
I made 6 pattys out of the chicken
I used a non stick skillet and some spray and browned each side of the cake to a nice golden brown.
I then transfered to a cookie sheet and baked for 5 minutes, flipped them and baked for 5 minutes more.
I served with some light ranch; blue cheese would also work.

I made these with egg beaters in place of the 2 eggs and I got the laughing cow blue cheese and they where amazing!!! My son had one on a bun and he also loved it! Great idea -Thank you! I will be making these all the time!0

This is a definate recipe on my list to try.
I guess you could use left over cooked boneless chicken.
