There is a variation, you can make your own whole wheat crust or you can use Mama Mary's 7' pizza like me. I will include both:
1 Mama Mary's pizza 7 in.
3/4 c. Black Beans
6 oz grilled chicken diced
1/4 c diced avocado
1/2 c mozzarella cheese
Spread beans over crust
Place diced grilled chicken over beans
Place 1/2 c mozzarella cheese
Place in oven at 350-375 until cheese is melted
Put avocado on top after you take it out of the oven.
Calories are 434 for 1/2 of a pizza.
For you awesome cooks: (and the vegetarian version)
The crust is whole wheat and I made it from scratch:
1 package rapid rise yeast
1 C warm water
...1 1/2 c whole wheat flour
2 T sugar
2 T olive oil
1 t salt
1 1/2 C unbleached all purpose flour
Dissolve the yeast into the warm water and let it set for 5 minutes or so. Then mix everything but 1/2 cup of the unbleached flour together; knead the last 1/2 cup in until the dough seems smooth and stretchy. Grease a bowl and cover the dough until its about doubled in size (20 minutes or so).
Then I spread the dough out on a pizza pan and cook it for about 8-10 minutes by itself @ 350.
For the rest of the pizza I use:
minced garlic
1 T Extra virgin olive oil
cumin, chili powder, cayenne pepper (optional)
...2 cans of black beans
1 diced tomato
1 chopped avocado
1 1/2 cups of low-fat mozzarella
1/2 cup of reduced fat cheddar
I saute the garlic with the olive oil and spices (which i don't measure, just add to taste) and then add black beans (with liquid). I let that simmer for about 15 minutes.
Then I spread the black beans in an even layer over the pizza crust, add in the tomatoes and top with cheese. Then I put it back in the oven for about 5-6 minutes and add the avocados when it comes out! I think its pretty easy and decently healthy!
