Peanut Sauce Noodle Chicken Bowl

I just made this for dinner and it was so good and so easy that I had to share!! I didnt really know what to call it so I kind of mashed together a title haha

Okay so this is a thai/asian dish...its basically japanese noodles with a thai peanut sauce with chicken and veggies and it is sooo simple to make.

Here is what you need (along with chicken and whatever veggies you want...I used mushrooms and zucchini)

- So start by grilling your chicken and sauteeing your chopped up zucchini and mushrooms in a separate pan.
- Take the Japanese Udon Noodles (or any japanese type noodle...I found these in the asian section in Kroger and they are 190cals/ 2oz. so I thought that was pretty good) and cook them according to the package ...(which is just boiling them :)
- Mix the peanut sauce mix (also found in the asian aisle in Kroger) with 1 can of lite coconut milk and simmer for 4 minutes

Mix all together to make noodle bowls. It is delishh!! ...annnnnd I calculated mine and it was only 467 cals for a pretty good amount.

Here is how I broke it down:
-190 cals = 1 serving pasta (which is 2oz dry...I just eyeballed it after cooked)
-90 cals = 2oz. of sauce
-137 cals = 5oz. chicken
-50 cals =veggies
total= 467!!

    Perhaps call it "Thai Satay Chicken and Veggie noodles".

    Looks awesome.

    you could add more veggies and less noodles to make it lower calorie...just a thought

    it needs coconut milk... i looked up online if it could be subbed and i couldnt find any alternatives
