sauteed veggies

Anyone have a good healthy way to do this? I make sauteed zucchini and mushrooms about twice a week for a meal, and it's honestly the one I most look forward to. Sooo yummy! But I think I need to alter how I make them. I put too much salt and seasoning, and I also think I use too much oil. Anyone have any suggestions to make delicious sauteed vegetables in a more health conscious way? Different kind of oil/seasonings?

    I read somewhere, not sure where, but someone said that using olive oil is a much healthier way to cook. And i use garlic (as in fresh, not in a jar) and I've not even thought whether it's good for me or not. I season everything with garlic! So, I'll like to see the answer to this in that way :)

    u can use low-cal spray olive oil /sunflower oil which is around 1cal per spray

    This is what I do. I use spray olive oil. The can says 0 cals, but I think that's because the calories are so low, they don't even bother counting them.

    Use herbs and seasonings instead of salt.

    I never salt anything, which wasn't a diet change, I just don't like salt! :-) It's good to know that I am using the right oil. My mother (yes, she's Italian) used nothing but olive oil and I really prefer it over others :)

    Yeah I think I'm gonna try to cut out the salt. Here in Swiss Land there is unfortunately no spray oil that I can find :( But I always use pure olive oil anyway, as well as fresh garlic I cut up myself and some seasonings like thyme and rosemary and pepper...I'm guessing those aren't too awful nutrition wise. Sounds like my ingredients are ok (minus the salt), I just need to cut them all down!

    Get yourself a Misto (pump spray that you can fill with the oil of your choice) and mist the veggies before you saute them. You'll still get the flavor of the olive oil but with a fraction of the calories. Nonstick pans are good to use to and can cut down on how much oil/mist you need.
