What's for Lunch? 4/16

I was sitting here looking at the food tracker and wondered about some lunch ideas.

Instead of a salad today I am thinking of making lettuce boats ...a salad you can eat with your hands!
then I thought...
there are a bunch of great fillings you could put in those Romaine Lettuce "boats"

one was the low fat Buffalo Chicken dip
or chopped egg and veggies
or tuna and tomato
or taco type filling with Salsa etc
or even some apples, raisins, or slaw type filling...ALL HEALTHY and calorie counted of course.:happy:

    Probably leftover grilled chicken on a deli flat.. weekends are mostly grab and go since I'm always running around.
    But I really like the your lettuce cup idea.. definitely will have to experiment with that so thanks!

    I have a recipe for an asian lettuce cup, its awesome! I'm having soup and whatever else is in the fridge

    I think I will be having

    Can of Tuna (in water)
    Mayo made with Olive Oil 945cal tsp)
    Celery
    Relish

    I also might pack some, but still have no decided

    2x Corn Tortillas
    1/2cup Black Beans
    1/2cup Corn
    Fat Free Shredded Mozzarella
    Salsa

    I like to pack 2 lunches, both small portions (1cup or less) ^_^

    Going with the Buffalo Chicken Boats. :smile: Not bad for 203 cals.
    The chicken is water packed and only 120 cals for the meal. The cup of celery will bulk it up and if you need an extra slash of hot sauce it's only 10 cals for 2 T.

    I just finished a couple of cheese steak hoagies.

    2 Nature's Own Hot Dog Buns
    2 servings (12 slices) of Oscar Mayer Deli Fresh Roast Beef (sliced up and sauteed in Olive Oil cooking spray)
    2 slices of 2% American Cheese

    YUMMY!!!!!!!!!!!

    A salad made with iceburg lettuce (it was a nice change from spinach based), banana peppers, olives, 4 slices 97% fat free turkey, cucumber, tomato, and greek vinaigrette dressing.

    That came out to 200 calories, 11 carbs, 8 fat, 22 protein, and 2 fiber

    Its from the original biggest loser cookbook

    Ingredients
    - 1 can (8oz) Bamboo shoots [drained & minced]
    - 1 can (8oz) Water chestnuts [drained & minced]
    - 3 T sherry
    - 2 T Hoisin sauce
    - 1 T unsalted freshly ground peanut butter OR reduced fat PB
    - 2 t low sodium soy sauce
    - 2 t hot pepper sauce
    - 2 packets (.035 oz each) sugar substitute
    - 1 T minced garlic
    - 1 c minced onion
    - 1/2 lb ground chicken breast
    - 2 t minced fresh ginger
    - 1/4 t salt
    - 1 t toasted sesame oil
    - 8 small leaves butter lettuce
    - 1 whole green onion
    - 1 small cucumber [seeded & sliced into 1" strips]

    Prep
    In a medium bowl, combine the bamboo shoots, water chestnuts, sherry, hoisin sauce, peanut butter, soy sauce, hot pepper sauce, and sugar substitute

    Mist a large, nonstick skillet with olive oil spray and set over medium heat. Add the garlic and cook for 2 minutes or until fragrant. Add the onion. Cook, stirring occasionally, for 3 to 4 minutes, or until tender and just starting to brown. Increase the heat to medium-high. Add chicken, ginger, and salt. Cook, breaking the chicken into small chunks for 3 to 4 minutes or until no longer pink. Add the reserved bamboo shoot mixture. Cook for 2 minutes or until hot. Stir in the sesame oil. Remove the pan from the heat. Spoon the chicken mixture, evenly divided, into the lettuce leaves. Set on a serving dish. Top with green onion & cucumber. Serve Immediately.

    Makes 4 servings

    I ended up using a little bit of bbq sauce/teryaki sauce because I forgot hoisin and it turned out fine. I also didn't bother with the cucumbers so I garnished with cilantro and more onions
