Lunch

I am a teacher and I take my lunch to school every day. I'm tired of lean cuisines and sandwiches. Does anyone have any suggestions of what I could take that is easy, cheap, and healthy??

    I brought stuff to work to make my favorite salad: 50/50 mixed greens, fat free raspberry vingarette, craisians, walnuts, and sometimes grilled chicken that I made the night before. Cheap, easy, and cuts down on the sodium from those microwavable meals that I often grab too.

    I found a bean burrito recipe that I've been obsessed with! 1 Medium whole wheat tortilla, 1/4-1/2 cup of fat free refried beans (warmed), shredded lettuce, diced tomato, two tablespoons of fat free sour cream, and a dash of hot sauce. With a 1/2 cup of refried beans it's only 270ish calories, with 1/4 closer to 250. VERY yummy and totally satisfies my Taco Bell craving. mmmmmm Or if you have a safeway by you, they have Bistro Salads that are under 300 calories and have meat and cheese and dressing all included in them. They look small but always fill me up and on days that I'm hungrier than usual I'll eat the salad and a peice of fruit.

    for packed lunches if I'm bored with sandwiches I like salads that I can make the night before - so pasta salad with tuna, cucumber, tomatoes etc or rice/couscous salads and some cold chicken. Do you have access to a toaster at work? if so pitta bread is a nice change from a sandwich - with houmous and salad.

    I love good soup. Make a big batch on the weekend. Portion it out. Just grab one! You are set to go. There are many good soups and stews out there chalk full of nutrition and flavor!!

    Hello,

    I'm also a fan of soup - its super easy, its warm so makes me feel fuller than a cold meal, and its a great way to taste lots of flavours and so helps to prevent those deprived dieter feelings you might get every now and then.

    And of course soup is low in calories but can pack in many veggies.

    I'm definately a soup convert - never thought I would be but I am!
  • Sometimes heat up meals can get soooo boring, that's true.
    Sometimes I like to take a 100 cal wheat bagel, some laughing cow cheese, spinach, a little lemon juice, and some pepper. And as a side I'll take a small salad or some baked veggies I can heat up.

    Also left overs and great ^_^. I always try to make enough dinner, like one extra turkey burger, or enough extra wheat pasta, for the next day.

    For my sweet tooth and something to snack on some Mandarin oranges, yogurt, or a 90 cal fiber bar. Something around 100 calories preferably.
