I've never kept track of calories before, so what is the best way to do it?
I still have 500 and some left for the day.

You really should eat all of your calories in a day. It takes a couple of weeks to get good at it, but it becomes habit.
how about a PBJ sandwich! That will take care of 500 cals real quick, give you protein and good fats too!
Dont forget to measure measure measure!!0 -
If you have exercised, you should eat those "exercise" calories. But most people try to be near a zero meaning, you have consumed at least what MFP has calculated for you.0

I stay pretty close to the recommended. I don't always 'eat back' the extra calories it adds for the excer I do that day but other than that I try to stick pretty darn close. However if I do find myself at the end of the day with left over I leave it be - I dont think eating a bunch right before heading to bed has any benifits at all.
I break my calories up over breakfast , morning snack, lunch, afternoon snack, dinner and lastly a evening snack (last one being the lightest)
I think this helps you eat all the calories, helps lesson the feeling of being deprived, and from what I read keeps the matabolism going. Oh and someone once told me to try not to leave carbs in me at the end of the day so that last snack is usually a 0 / low carb snack0
